I don't know- this is my first stainless Opinel and I've had it less than 2 weeks!
The high carbon models take the sweetest edge I have ever seen.

I've used mine to cut a few apples, some chicken, cheese, other odds and ends...and it's still sharp enough to slice an apple (I had one last night). That's with a stainless one...I'm going to get a carbon one next time I put in an order with someone who carries them
