My prediction is that it'll be a Gerber special edition 'McGyver Ultimate Multitool'... which, of course, is actually a Suspension with bright red plastic handles.

The SAK is such an iconic part of MacGyver I would hope the makers would be sensible enough to keep it.  It would be like making the A-Team without the GMC van.

Modern remakes don't really seem to care much about tradition when it comes to the classics they are ripping off. I'm kind of surprised the General Lee in the Johnny Knoxville remake of the Dukes of Hazzard hadn't been swapped out for a modern Dodge... or even a Honda Civic. After all, Bumblebee was named that because he was a yellow VW Bug- the name doesn't make much sense if he's a Camaro.

It'll all boil down to whatever company ponies up the most cash for the production company.

I thought the makers of transformers asked VW if they could use the new Bug and they said no as they didn't want the VW brand associated with violence.

You never know these days what the reasoning is.  My guess is VW didn't want to be associated with those awful movies.
