The knives that get the most use are a Masamoto 24cm high carbon gyoto and a Misono UX10 24cm sujihiki. You have to treat em right but Japanese blades make it a pleasure to slice. That being said I have many many chefs knives and have more than 10 Victorinox with the rosewood handles, that I used faithfully for the first 10 years of my cooking career.

Swapped out the blade for a set of scissors from a Wave...it's now the Kirkyclip

I struggle to cut my fingernails on my right hand with the wingman ones, they're a bit loose. That's why I need to add some scissors to an alox SAK.
