Here we go.

Messer is a knife, right?
Scmied is the smith, right?
Messerschmied should be the knife maker, right? Or is it Messermacher?

And what Messerscmitt stands for?

I know no German at all, just some English and French, from which I get curious about some German (or Dutch or Scandinavian) and Italian (or Latin, Spanish etc.).

Some german names sound like English equivalents and some of them are coming from trades. But it might be a coinsidence, I don't know.

For example, Schuhmacher sounds like Shoemaker. But is it? Google translate doesn't help everytime.

So, what Messerscmitt means, or what mitt means? It means "my" in Swedish, according to Google, but in German?

Online Etymology Dictionary. type of German warplane, 1940, from name of Willy Messerschmitt (1898-1978), German aircraft designer. The surname is literally "cutler, knife-maker."

Hopefully some of our german friends can say if this is correct.

I just googled "Messerschmitt etymology"

I think, Messer is just German for Mister
Schmitt is just  German for Smith,

so, it just means Mr Smith

My German is poor (and rusty, on top of that), but yeah, Knife-Maker sounds right. Like English, German has lots of compound words. But rather than shorten bits of the roots, and sticking them together, (like can't, wouldn't) German's only put together whole words (like Railroad, Basketball in English), only with no limits on how long these compound words get. Which gives us gems like "rindfleischetikettierungsüberwachungsaufgabenübertragungsgesetz", which means "the law for the delegation of monitoring beef labeling"

Well, not German at all, but since all Bavarians have to learn German at school, I might come in handy here ;-)

Our Greek friend is right in his assumptions - the medieval German word for  smith, smit, (today Schmied), was put into  several own names like Schmid, Schmitt, Schmidt, and also Schmitter before the German orthography was standardized.

Messerschmitt is a compound of Messer (knife) and schmitt (smith), with only a very small chance that "Messer" could have been derived from Meister, meaning master.
Schuhmacher is in fact the northern German equivalent for shoemaker, in Bavaria you would say "Schuster". ;-)

Here's one I could use some help with. Had a couple of years of German is school, and still have a German/English dictionary. However about all I can come up with for this is Special Fund for Trash Removal. Don't know if that's even close.

Your translation hit it quite well, I'd roughly translate it with "Union with the purpose of clearing away the refuse in the area of (the river) Linth"
Yeah, neither very well-sounding nor anything like elegant... the German word "Kehricht" for example is so wonderfully antiquated that I doubt anyone from generation pokemon-selfie would understand it. A direct translation for it would be "sweepings", but the broader sense "refuse" seems more at place here.
 
"Zweckverband" as an expression is about as sexy as "supporting stockings" (which, btw, would translate with Stützstrümpfe", another word which illustrates the beautiful sound of the German language and why I prefer to speak Bavarian) and is one of the ugly children created by "Beamtendeutsch", the kind of German used in administrative functions.
