Carbon or stainless steel? I don't have any, just wondering which you prefer. I like carbon myself.

Oops, guess this model only comes in Solingen Steel (stainless), which is good stuff. Nevahmind!

Hmm, after further investigation they might just come in both stainless and carbon.
