I say SAK like a Sack of SAKs, or Esteban's SAK Sacks and of course SOSAK is pronounced "Sew- SAK."Def
I say "Swiss Army Knife" or "Victorinox knife" or quite often just "knife".I only use acronyms and abbreviations on the internet.
I know a guy who uses things like AIM and text-messaging, and he uses abreviations in "real life" all the time. Even when they aren't used online. It gets EXTREMELY annoying. He likes to jump on trampolines, but he never says "trampoline". He always asks me "You want to go jump on the tramp?" I'm trying to think of better examples, but none come to mind, I try to ignore him when he says things like that.
