I keep one of my Opinels in my camp cook kit.  Its such a good knife for all things food. 

Soup looks  :drool:

No, I don't believe that anything beats an Opinel for slicing food. It can free slice cucumbers by holding it over the salad bowl and slicing away above it. Same with bell peppers. Impresses the family.
Don't get too serious, just enough will do.

 :iagree: but for me, the light weight is an important factor as well. I'm another that reserves permanent space for a few Opinels in the camp kitchen.

 :iagree: For their cost and weight, they're amazing.  Considering that basic design is 131 years old, they're incredible!!  I don't know if there's a bigger fan of these knives than me  :D   I picked up the there piece kitchen set for Mrs. R and she loves them.  Actually, speaking of Mrs. R, a No. 6 was the only knife I could give her outside of a Vic Classic that she'd accept.  I miss that knife  :facepalm: :rofl:

I know, love the 8, 6 is kinda small, 8 slim is great but only for it's intended use...

I like the 8 for the kitchen, but I prefer carrying a 7. The 6 is doable, but not as comfortably.

I had been buying "vintage" Opinels for camping a while back, but realized that I prefer the newer ones because they lock closed
Seems like it's not much of a bargain to buy the vintage for that reason and they seem to hold their value well  if cared for.

I’ve been using a 7 in the kitchen for a long time but after testing out the 12 for every part of the meal I prepped and cooked on Saturday, can see this becoming a regular as much closer in size to a regular chef’s knife.

The only real problem is being carbone it’s already got a few rust marks even after being careful to properly clean and dry it

I agree on both counts.  I went to order a No. 2 but Opinel USA was out of stock.  They're so tiny....I have a pic of an old ad that shows all of the lineup sometime in the 1930's, including the No. 1.  I can't imagine how tiny it was!

I'm sure you're aware, but a very thin coat of mineral oil after clean/dry will eliminate that problem.

Is that black handle painted Beechwood, or Ebony?

Thanks Nut, yes exactly what I will be doing come the weekend. I was surprised how quickly it happened though as I’ve quite a few Opi carbone knives and never had an issue so fast, wonder if this one being a bit older the composition is a bit different :dunno:

Interesting thought. I believe they call today's "carbone" alloy XC90, but know nothing about it or how long it's been in use.

The No.10 with a corkscrew. This is my one and only knife in the kitchen. Everything else is packed away.

It does absolutely anything and everything I need... Except for one...

Choking up on the blade and spinning the foodstuff around the thumb... To core half an apple or de-stem a strawberry... not easy to do.  So I don't. No big deal.

My other kitchen knives are Victorinox.  I am so un-used to the 8 inch chef's knife... Which is a workhorse for most people.  I'll never get a regular chef's knife again.

I use a No7 a fair bit but can see this 10 replacing it EB, just that bit more heft.
My other most used knives are a Vic serrated pairing knife and a santoku chopper which is probably my favourite all round kitchen knife :cheers:

Maintenance day, food grade mineral oil for all the carbones today and a close up of the No12 lock, be interested in a date if anyone has any ideas :dunno:
