I was cutting up some vege's the other night using a generic brand Ceramic paring knife that cost me $15 (from memory) in a kitchenware factory shop and I got to wondering if i could be a complete butcher and use the spine of the ceramic blade to sharpen a steel knife blade.
So I grabbed a "organ donor" SAK off the workbench and using a "steeling" motion against the corner of the back of this little ceramic blade I soon had a very nice bevel on the SAK blade, changing the angle of the ceramic blade so it was less aggressive for a few strokes and then a quick strop on the leg of my jeans I managed to get this old beater shaving sharp and it is a nice looking edge, not all ugly like most stones leave it. (or maybe that's just me...
)
I was quite amazed.
