What exactly is the difference between a S30V and a 154cm blade?

I have no Idea what S30V is, which is not surprising, since I'm not big into metallurgy, but it suggests that it is the newer of the two, and thus (although this is a silly thing to assume) has the preferable qualities.

In a nutshell, s30v is a newer steel. Both I believe were developed by Crucible Metalurgy. S30v is a powder steel, which means that it is forged from many many tiny pellets. 154cm is I believe not a powder steel, so it's forged with globs of different materials.

Both steels are good, s30v is a little harder and has better edge retention but is also sometimes prone to chipping, at least in earlier incarnations. But both steels are very very good. Disregarding heat treating, etc. the s30v of my Benchmade and the 154cm of my Leatherman are more comparable than they are different for most uses. I do notice my Leatherman dulling slightly quicker, but it's absolutely not a big deal.

If you don't know the difference, then it won't make much of a difference in everyday life. All things considered equal, I'd prefer s30v just because it's a little tougher and "cooler."

Redheads have a distinctive.... essence that I've never found elsewhere... and that's good.  :o ;)

The collars and cuffs of most blondes don't match, whereas the collars and cuffs of most redheads do.

I don't know the difference between blondes, brunettes and redheads. We have only one of a kind over here... this kind.
