I'm part-way through watching The Last Watch, a fly-on-the-wall look behind the scenes. One thing that came across was that Season 8 was much much bigger production-wise than any of the other seasons.

Also there was some griping that they were basically producing a movie for each episode but with less time and budget. Doing things like building King's Landing.
There's an interesting scene where all the actors are reading through the script together for the first time and you see their reactions to learning their characters' fates.
