I have two similar knives, one is in considerably better shape. I'm somewhat confident one is carbon steel and one is stainless steel.

I'm trying to date these two, I know the 3 faces tang stamp is synonymous with Tahara, but other than that I don't know much about it.

"1900  Cutlery Works established in Delemont. On July 16 the building permit was granted, and the installation of the new facilities and the transfer of the workshops from Courtetelle was completed before the end of the year.
• 1900-1940  old tang/shank stamp is 3 face logo, another very old stamp may be from the very early years a squirrel with Courtelle Suisse." (SAKWiki)

Anyone have any information on these? 1900-1940 is a pretty wide range, I'd assume they transitioned to stainless around the 1920's same with Vic.
