Sharpening angle

Sharpening angle

What are the factory edge angles for all the different size blades?
And what angle do you use for sharpening?
I can't decide between either 15 or 20 degrees per side. I think I'll go for 20 since the steel is on the soft side.

I sharpen all mine to around 15 per side. I like my knives to actually be able to move through wood. The factory edge is sharp, and may be a bit stronger, but 15 degrees makes a much more enjoyable and easier cutting experience. Just use a sharpening steel to straighten the edge, if you roll it. Saves wear and tear.

I cannot recall Vics factory edge angle  :think:.  I am recalling 20dps tho give or take 2 degree.  I use a Spyderco Sharpmaker 20dps for all my SAKs blades but only when they really need it.  I strop my SAK blades to bring back the edge sharpness for all blades I have.

I've been following the same process for the past couple of years; Sharpmaker when necessary otherwise stropping in between uses. I seem to recall somewhere that Victorinox uses a 17dps for their 91mm SAK blades. The Sharpmaker has presets of 15 and 20dps, so I just use the 20dps side and have been extremely happy with the results. If the blade is new and fresh from the factory, stropping should be all you'd need to get that edge back, unless you've put it to some serious use.
