According to this source, the yellowish color on the old inlays comes from the composition of the inlay, the old SAKs had the inlay made from nickel silver, whereas the newer ones are made from the stainless steel.

No. Old SAKs (pre 1978) used nickel-silver as the metal for the inlays (including the logo). This turns a nice gold color as it ages. Since the late 1970s Victorinox has used stainless steel for their inlays, and these stay silver-white as they age.

That second one looks like it has a solid, no-can-key phillips on it. Please let me know if that's the case when you get it.

"The tarnished “golden” appearance of older Victorinox emblems in their plastic scales shows the high brass content of the “German silver” that these were made of; the shiny emblems on the early fiber scales were made of an alloy of nickel and chrome having no brass. Since 1980 the emblem has been made of Inox (stainless steel)."
