Other than the smelly grey things on the left, that looks good!  :D

Just put some olive oil, garlic, salt and lemon sauce on them (takes a minute to make) and good old boring fish tastes great. I even used the sauce on the burgers  :D

For various reasons I had not done any outdoor cooking for some time, relying on the Oven grill, frying pans and Deep fat fryer...

The cheese gets a really nice smoky flavour, whereas, because of the short cook time, fish does not taste too special.

Congratulations on the outdoor cook badge and don't mind my teasing- I don't eat any seafood at all, so no matter how good you say your fish is I'm not interested.  :P

There are many people that do not eat fish - why do you think I was also cooking burgers  :D

If you want to try a non-fish tasting fish then a swordfish steak is a good option.

I've heard the same about shark steaks.  One of these days I might give them a shot.

I'm mostly with Grant on the 'not a seafood eater', which is sad, because i know so much of the world loves fish.

I think it has to do with growing up in the Midwest of the U.S. There's really only river fish to be had around here, and they can be gross, depending on the quality of the river they come from. And the really funny thing is one of the few fish I like is river-raised Catfish, which is about as nasty a bottomfeeding fish as you'll find.

It seems a little odd that you cook it with the heads on. I also usually see it flayed open to speed cooking time. Do you stuff the fish with herbs or anything? Sorry for all the questions. I'm mostly ignorant in the ways of fish grilling.

Usually smaller fish is cooked with its head on. There is some small amount of meat on the head and small whitebait size fish is usually consumed whole, but you can chop the heads off without really loosing anything. Some do that so that the fish does not "look" at them when it's cooking. No need for any stuffing. Larger fish can be wrapped in foil and left to cook under a bed of coals.
The trick is in the sauce, containing olive oil, lemon, garlic, parsley and salt. It takes a mi ute to make and anything you dip in or douse with tastes great. I have used this sauce on carp too, but we mainly eat seawater fish (the Mediterranean fish, because of its high salt content, are especially tasty).

I have the choice of both salt and freshwater fish and won't eat either of them.  :P
