I love Texas, my family had lived in Houston Area since the early 1800's, I was stationed at FT. Bliss outside El Paso. Then I spend a few months living in Dallas area. Wish I could move back at some point.

I spent some time stationed at Ft. Sam Houston in San Antonio way back. I loved the San Antone area and Texas in general, and aways had an idea to go back someday. Looks like I made it.  :D

I must be one of few americans who thinks that those all sound delicious, although the production of foie gras is admittedly a bit unappealing...

Exapnd your horizons! Kidneys are yummy. Ever had a lengua taco? Cows tounge on a corn tortilla. Delicious.
I agree that referring to it as pudding is strange. Glad that tradition didnt make it across the pond.

I blame Columbus. He started it all, confusing our natives with the Indians. Nothings been named properly since.

I'm sure if Columbus had a SAK with him things would've worked out better. Never mind Amerigo Vespucci how about the United States of Victorinoxa ? No one would complain about that.

I'm an Arizona boy....Lengua Tacos are a staple.  I'm still not eating anything related to a kidney

I tried pâté de foie gras and foie gras, both only once. I'm not inclined to repeat that experiment. Boudin I won't even go anywhere near it  :ahhh

Kokoretsi is a festive dish here, we make it in Easter. It can be savoury but it takes expertise. The trouble is everyone thinks they're really good at making it.  :facepalm:
