What would you, ideally, put on your Fish and Chips?

Depends greatly on what fish, and if it's from the chippy,or home cooked?

Steers seasoning salt is a must in all eventualities!

Skordalia (aliada) naturally. If it is codfish.
For smaller fishes, lemon.

Since I kinda began this dispute let me make things clear: LEMON. On any deep fried meat dipped in batter, including all kinds of fish. At least that is what you do if you want yourself to be considered a civilised person where I come form.  :D

There's the next 2 polls taken care of then. 1. Cheese or no cheese on your pasta, and 2. What type of cheese

far be it for me to agree with Kirky, but yeah depends on the fish and how its cooked. From the chipper, definitely malt vinegar, home cooked and unbattered usually lemon.

As we're talking fish and chips I'm assuming our national dish is under discussion, so deep fried, battered fish with fried potato's. Gotta have some salt and vinegar on that - usually added to whatever the person at the chippy put on.

The default setting for a UK chippy is salt and vinegar! It's wrong not to, culturally, culinarilly, and morally.

If I'm taking them home, I might add some Hendo's (Hendersons Relish)

Lemon is for unbattered fish, and battered fish in a restaurant will often get both lemon and vinegar.

Brown sauce is for sausage and bacon, not fish.

I don't tend to use ketchup on anything.

OK, I'll play.

On the fish: salt, malt vinegar, then tartar sauce (duck, serpentine run).

On the chips (fries, for us US barbarians): Heinz ketchup.

If any of you visits Greece or Cyprus this summer, for roasted big fish (or lobster etc) just use oil/lemon sauce, called ladolemono (with thyme or oregano preferably). I use to cut onion in it, but that's unusual for a restaurant.

Careful now C-Sazzle  :D It's a geographical thing isn't it? For us who live dahn sarf, chips ent chips wivart salt 'n' vinegar, but I understand my Northern brethren enjoy curry sauce and/or gravy (hopefully not both at the same time). Even further North, I believe the Scotch (  :D ) like their chips battered and deep fried to accompany pizza/mars bar etc

It has to be mushy peas with fish and chips, but I thought that was too obvious to need saying.....
