Butter.  Excessive salt.


Chunk sea salt all over it. Try cooking it in the cast iron on one side only.  In for three, out for 2, back in for three.  Don't flip it. Don't touch it.  Just make sure you have a good steak, good butter, good salt.

It's an idea I saw and tried.  - with a porterhouse, after the first three I cut the meat from the bone and sliced - formed back around bone and in for the other three.  Really gets an awesome crust on one side, tender pink on the other.  :cheers:
