It minimizes the angle the other way. If you imagine that at a certain point of opening, the jaws will be parallel, any opening beyond that point is at a lesser angle than it would be should the pliers be parallel when closed

The same for Channel lock style pliers and even Vice Grips. The pliers hold the material better, applying even pressure when the tips are parallel or less. If the material is bigger and does not permit that parallel closure, failure is more likely to occur, and bigger tool is a better option.
