Looking for techniques/products to polish Victorinox steel.

There are several SAKs in my collection that I made the mistake of washing with the coarse side of a dish sponge. This left light scratches going up and down the length of the blade. One polishing compound I was looking at was Simichrome, but I noticed its product page on Amazon says it leaves a small protective residue on the surface. I don't want that, as I often use my SAKs on food, and I don't want polishing compound residue on my apples.

How do you guys go about polishing your SAK steel?

Errr... I don't. :)

What about the polishing compounds for steel cookware? They would probably be the best bet for finding something designed not to leave a residue.

It will depend on how badly they are scratched. For surface scratches the blue polishing paste or similar may be enough.  As for residue you should be able to wash it away, using the right cleaner.

Flitz is another popular product used to take care of light scratches.  I've used wet/dry sand paper with really good results.  I always follow up with green polishing compound for a final high gloss finish.

I do not recomend chromic pastes for polishing. Espetially when you use the knife for food.
You can use sandpaper with 5000 grid. Or 6000 grid. Than at the end use regular toothpaste for shine.

I always use sandpaper for that
takes time and patience but worth the results IMO   :tu:

Before you go out and buy anything special try some car polish  ;)
Wash the blade well with dish soap when you have done  :tu:
