well goulash should technically be a soup with meat, just like a ragu is a sauce with meat.
technicality aside, this is one of those goulashes that doesn't use tomato or paprika. if you were to look at a chicken goulash it would also be less red, and a hare stew is either a darker brown color or a bit grayish

well i should add that stew and goulash are the same thing, goulash is just a localised word. it used to mean the difference of adding hot hungarian paprika in (btw paprika is just a word for pepper like a bell pepper or chilli pepper)

another interesting fact, for some of you, is that stews were generally ways of using and hiding meat that wasn't very appetizing.

one thing I'm itching to try and make is fiš paprikaš as it is called here. most translations i've seen call it fisherman's soup. a very common dish in Hungary, eastern part of Croatia and western parts of Serbia (I beleive mostly Vojvodina) that is spicy, uses paprika (a bit uncommon in fish dishes) and is made with river fish rather than sea fish.
a similar dish made with sea fish is called brodet here, although there are more varieties of fish and there is a version called white were no paprika or tomato is used and a lot of white wine. it also often includes potatoes.

speaking of potatoes and spicy, there is something common in these parts called krumpiruša, which is often translated as potato  pie. not sure how others cultures make their potato pies, but if you stand between me and this, you're risking the loss of a limb

OK, guys, we have to get some Chili going here......

Maybe Tuesday. 

I'm going to aim for a new batch of Chili on Tuesday or Wednesday.

I'm thinking about a Lamb & Beef chili.  Old School.  A lot of chile, a lot of garlic. A little onion. Some tomato to keep Mrs Nix interested.

C'mon, it's Fall, it's cooling down,.....IT'S CHILI TIME!   :ahhh

That chili dish I made with cornbread would have been nice yet it’s muggy/hot and rain out,  I did buy a set of dishes just for that little setup, so maybe this week the Mrs and I will make a chili night since the temp will drop,,

Fresh batch of chili today:

Started with dried chiles (Ancho, New Mexico, Pasilla, and a couple of Arbols):





Made a nice fragrant chile paste with roasted garlic:





Browned up some bacon, diced beef, and minced lamb, along with more garlic and an onion. Chilie paste got added, along with a lot of toasted cumin and coriander. Some chicken stock and a can of tomatoes were added to complete the stew. A big pinch of Mexican Oregano for flavor got added after it all simmered for a while.





It ended up being a little bit thin. I don't think that will be an issue, though. I also made a pot of pinto beans. The chili will be served over the beans and I think it will be pretty thick in the end. Tastes great.  :tu:

Well, not totally chili but it’s included,

Me and the little guy walked down to the convenience store for a few goodies, but he wanted a hotdog and I said why not, there was one big spicy one sitting there, so I grabbed it dumped some chili and cheese on it, told him to go grab a soda all while I snuck a cookie on the counter so he wouldn’t see it until we finished our hotdogs on the walk home, ;)

Back in the day I was working at a job site installing the plumbing/gas (a Hilton garden inn) great location cause whatever fast food you wanted was only a 2min drive, but there was a convenience store across the street, and whether morning break or lunch break you could just go grab something, but they had a hotdog machine, I don’t like just plain hotdogs, there just not my thing, but they had what was called a Bahama mama, I think :think: but this thing was huge and had SPICE! but I’d load it up with chili and cheese, sometimes grab two, oh these things were good! I used to brag to the Mrs who was only my gf at the time, but one time we took a trip and this place was on the way so we stopped in to get drinks and some goodies and I made us each one, she saw it and was like holy crap, that was until she tried it and was like HOLY CRAP, this thing is good! Totally had some good flavor with some kick plus the chili, mmmm! I must say that one I just had from the place down the street was pretty close, and when I told the Mrs, I think she was pretty pissed, not for the fact that I got one but for the fact that I didn’t bring her one home! Unfortunately it was the only one so :p lol
