Mine ended up with a little more kick than I was planning,  even on a bed of rice with cheese on top
The difficult we do immediately, the impossible takes a little longer.

There are a number of recipes on-line, Greg.  I don't follow a recipe per se, but I had to have gotten the basic ideas for slow-cooker carnitas somewhere.....  :think:

I usually make a batch a couple of times per year. We eat some for a few days and freeze the rest for later use. It's pretty simple to turn 'carnitas' into a tasty BBQ pulled pork sandwich or use it in soups, etc...... 

It would be great fun to sample each other's chilis, etc....

Actually, it was my brother - inspired by an episode of Columbo, he did some research and came up with what he thought was the closest recipe to the original.

So, I suppose in some way you can credit Peter Falk for it.  :cheers:
