I put the leftover chili out in the snow last night. While that was reheating this evening, I made a cornbread:




This was a Southern-style cornbread, without any wheat flour or sugar. I did add a bit of cinnamon, because that is how Mrs Nix likes it. And cinnamon is great with chili.  :tu:

All served up with a little cheese and a lot of chopped Serrano chiles:




Great meal. As JR can testify, it is hard to beat cornbread and chili.  :tu: 

(If anyone wants this cornbread recipe, give a shout out. I'll be glad to post it up.)

Thawing out for tonight's supper.

Since we always have ours on a bed of rice, and someone mentioned it a few pages back, this is how I make our rice:

Large pan, generous olive oil to cover the bottom mostly, high heat, peel and split a peeled clove of garlic in half, and brown in the oil/flipping to make sure it's even (in fact, you can let it blacken) Add rice and mix around, then add water, our rice calls for 2.5x per 1 measure of rice, I usually put in 3x and add a beef stock cube, mix and cover until it starts to boil, then uncover, and drop heat to half for ~20min/water is all evaporated. The garlic should have floated on top and be easy to remove.

That as a bed, chili on top and a generous slathering of grated cheese (we have a preferred grated 2 cheese mix with cheddar/gouda that is awesome)

edit: I should add that my wife says I make better rice than her, and it's her technique.

I've never tried making it like that. It sounds a bit like a risotto technique. I'll give it a try.

I usually melt butter or heat olive oil in a small saucepan, stir my rice into the hot fat and let it cook for a couple of minutes. Then I add 1.25x part liquid to 1 part rice. I bring that to a boil, cover, and let cook for 20 minutes. Then I remove it from the heat, fluff it up, and let it rest for 10 minutes (very important to let it rest and 'dry').

I like using chicken stock or chicken bullion for the liquid, but I like the sound of your beef cube and garlic.  :tu:

I wouldn't know what a risotto technique is like, but it does seem like it would be a tad similar. Also different rice types/variants would cook differently.

It's possible that it can be a bit gluggy like that, but imho it's perfect for mixing with the chili and cheese :D

I had heard of chicken stock, and I tend to lean on beef since the chili is also beef... just seems to make sense to me?
