Opening day of Baseball season today.   :ahhh

I went down to my local pub to watch a game and have a cold one. As an unexpected bonus, the special today was chili. This place usually has good green chili, but they do a nice red chili once in a while. Lots of flavor, pretty spicy for a bar/restaurant. I didn't get the recipe, but it had large kidney beans, small red beans, bit bits of onion and tomato, ground beef, plus plenty of ground chili. Tasted like ancho chiles, but there must have also been some other spicy chiles like cayenne or arbol to bring the heat. Yum!

Oh man, I could have so gone for some chili today heck I can still go for some, even if just used as a dip,, :( and I got stuck with a fluffernutter because I just got home from the dentist and couldn’t have anything crisp or hot.. :think:

It’s ok, I’ll live, and to think the little guy wanted hotdogs with chili, lol, but mom said your not wasting a can just for two freaking hotdogs that and he also couldn’t eat anything hot..

I took your idea and ran with it.

Used some leftover black-bean chili that I found in the freezer (yeah, I never know what I'll find in the freezer) and made some Chili pot pies.....

The chili was a solid 'bowl of red' made with black beans:



The beans were cooked according to a recipe I got from a roadhouse outside of Santa Fe, New Mexico.

The cornbread topping was good, but I think I could have used a slightly different recipe. Regardless, the 'pies' came out looking pretty good:




I added a bit of cinnamon to the cornbread batter. Oh, it smelled amazing! (still does.) Overall a great dish. I'll definitely try this again (mostly because Mrs Nix loved it.  :D)!

No avoiding that.

There was a little black bean chili leftover from making the chili pot pies a few days ago. It was clear, however, the remaining chili would not be enough for both me and Mrs Nix. She doesn't like it when I don't share dinner with her, so I devised a cunning plan....to the left over chili I added a can of Rotel, a left over grilled pork chop (finely diced), and a big pinch of chili powder. Voila! A new batch of chili from leftovers.

Mrs Nix said it was my best chili yet. He he he  :D
