Great crew you've got there, Steve.

Me, I love Sidney Bechet and the great Louis Armstrong. But I can get into just about everything from Glen Miller to Miles Davis.

Kevin, I've never been overly taken with the sounds of the band going down the stairs either, but I have found that the more I listen to Jazz, the more I come to appreciate it, even the more 'avant guard' pieces. Hope you'll join us for some of the blues programs at least.

And we're thinking of trying to organize special 'guest' programming and podcasts featuring music we can all stream. We're open to suggestions for sure!

Given the global scope of this forum, it's impossible to pick times when everyone can tune in, but let's try to get some different times set up so we can all find a cozy chair in the Speakeasy.  :tu:

That's a great point, Steve. The descriptor "Jazz" has almost come to be meaningless--it just covers too much variety.

I'm proposing that the Speakeasy featured cocktail for Saturday night should be the "Old-Fashioned". Mostly because I love this drink and Marc and I are both whisky fans.

My father taught me to make an Old-Fashioned when I was 15 or so. I'm not sure why I needed to know this art at that young age, but I was grateful for the instruction.

I dug out my copy of Craft of the Cocktail by Dale DeGroff. Here’s his take on the old-fashioned:

Dale DeGroff Old-Fashioned:

1 teaspoon sugar
2 dashes Angostura bitters
2 orange slices
2 maraschino cherries
2 ounces (59mL) bourbon
Water or soda
Ice

In the bottom of an old-fashioned glass, muddle the sugar, bitters, one orange slice, one cherry, and a splash of water. Remove orange rind. Add bourbon, ice, and water (or soda). Garnish with second orange slice and cherry.


Dale is a master-bartender so I won’t argue with him too much. But I will say, I think it’s a good idea to start by muddling the sugar and splash of water first, so the sugar can dissolve (or use a simple syrup). After that, add the orange rind and muddle. Then remove the rind. Then muddle in the cherry and bitters. Stir in the ice to chill and dilute. Then add water if needed.

I prefer a clear looking Old-fashioned, so I make the drink in a bar glass and strain it into an old-fashioned glass….or whatever’s at hand. Then add extra ice if needed.

The keys to a great cocktail are 1) good spirits and 2) great ice. So, if you are going to make an Old-Fashioned for Saturday night’s Speakeasy session, it might be a good idea to make some fresh ice today. And be sure you have some bourbon and bitters on hand for tomorrow evening!
