Just from the purpose, and the terms skinning and animation, I think you'll have more success looking for 3D modelers and animators rather than 5-year plus experience product designers. (What kind of software and file format do you use? That will be a good indication for which background you actually want).
Someone with 5 year plus product design experience is hardly needed if you don't actually need to think about all the levels, choices and details that goes into making and manufacturing products in the real world. Do you need to do physical design, various strength and durability analysis, material choices, choose methods for manufacturing and assembly, adapt designs to optimize for those chosen methods, minimize scrap, consider storage, packing and shipments, work with subsuppliers, make production level drawings, make sure parts can be inspected and accepted in a meaningful way, etc etc. Hardly seems relevant for making visual training videos?
On the other hand, if you want someone who can make a virtual visual 3D model from something existing, and animating that, then you should look for people with that kind of background; 3D modelers, animators. (More likely to be found in movie, game and advertisment industries than product development).
Looking for one thing, while making strict requirements for something else, will certainly narrow the available pool of people a lot.
