I have great results with diamond sharpeners (stones and flat plates) and also the diamond rods on the Sharpmaker (not cheap ::) ) If you can get the bevel set to one of the presets on the Sharpmaker then it will be easier the next go round :salute:

Try using a Sharpie on the edge and make a few passes to see if you are getting all the way to the edge :salute: if not then you will just have to take the time and get the bevel thinned down :cheers: other than that I don't know what to tell you unless I just saw the knife :tu:

I just use a diamond stone and sharpen by hand then strop.  Seems to work fine - thought the edges on all of my GECs were pretty good from the factory.

Lansky Turnbox and a sharpening steel for edges that just need a touch up. Whetstone or diamond for really dull edges.

GEC carbon will get hair-popping sharp, but it will take more work than stainless if that's what you're used to.  It's somewhere between stainless and D2...

I agree with your thoughts on GEC fit and finish compared to other traditional knife manufacturers.  However, I can't really say that it's better than Victorinox since I've never seen a Vic that wasn't near perfect, and I've never bought a Vic that didn't have a near perfect edge out of the box.  I've certainly had GECs that needed sharpening and even reprofiling.  Keep in mind the vast numbers of near perfect knives Victorinox is capable of turning out, and that there's very little hands-on fitting occurring in the process.  On the other hand, GECs are produced in relatively small lots with a lot of hands-on fitting.  Due to this, I just find the two harder to compare than one traditional manufacturer to another.  Case is probably the closest one to Victorinox from a production standpoint, but still really isn't even in the ballpark.

Thats a good point about volume. I will work on the sharpening again tonight if I have time. Its not that its not useable, i just don’t have it where I want it yet.

Lovely knives. 

Carbon steel does get wicked I find when going thru a progression.  My 2 bladed slippy is stupid sharp.  I got it as dull as bowling ball.  I re set the bevels to 15 degree per side then took them thru 1200 wet dry ( before I had stones ) and stropped thru a progression ending on green compound to their final finish.  Its a Buck Creek brand with 2 blades.  Good luck with getting your blade to the level you want.   :tu:

It does look like canvas micarta, and I know GEC has used that material, but it never seems to look green...

Well, I had a green canvas micarta Enzo for a while - that was more dirty browney in colour than green.

It's the OD canvas micarta (good stalking, fuzzy!) from last year.  It has got darker since I've had it - probably because I wipe it over with a mineral oil soaked rag when I oil the blades and pivots.
