Barm? Lancashire? That's a chip butty here, and it's a breadcake  :D

I would add fishcake butty to the list, but nobody outside Yorkshire knows what a proper fishcake is  :rofl:

What most Brits call a fishcake, we call a rissole. Our fishcake is white fish between two slabs of potato, dipped in batter (like pancake mix) and deep fried.

Other must tries are Twiglets, Bassets Liquorice Allsorts, Maynards Wine Gums, steak and ale pie, Cornish pasties, corned beef hash, gingerbread, rhubarb and custard, spotted dick, and Bakewell pudding (not to be consufed with Bakewell tarts) .... though not necessarily all on the same plate  :P

Treberwurst (??? sausage)
This is a smoked Saucisson (Vaudoise or Neuchâtel style) made of pork and is only available around Lake Biel and only in fall. After the grapes are pressed and the juice is made into wine, the pomance gets made into pomance brandy. The Treberwurst is hanged into the still-head where it gets heated by the vapor carrying all the flavors from the grapes.

And of course there are the traditional dishes
- Mountain cheese
- Fondue (molten cheese)
- Raclett (molten cheese but different)
- Hashbrowns

All wonderful - Especially Raclette

Don't you mean Rosti ?  ???
Mmmmmmmm - Rosti mit Spiegelei - Preferably eaten in a mountain hut above 1500m - after a hard days' hiking

I've not really delved into the regional food down here in the south west UK (except for sampling the excellent cider :P) but where I used to live in Midlands the we had some excellent specialities:

Stilton and red Leicester cheeses - a soft blue cheese and a hard crumbly cheese
Melton Mowbray pork pies - hand-raised (shaped) pie made with hot water crust pastry and filled with pork and jelly
Staffordshire oatcakes - a soft pancake, similar to a galette but thicker and made with both oat and wheat flour.  Served with cheese and other fillings such as bacon, baked beans or sausage
Bakewell tarts - a sweet almond filled pastry

Down here we have the original Cheddar cheese, and from just across the bridge in Wales are my favourite: welsh cakes - a sweet bread with spices and dried fruit, flat-baked on a griddle or bakestone.

We have a guy in the neighborhood who is from Cali and sells burritos from his foodtruck :D, although he uses rice instead of fries. Best burritos I ever ate.

For Vermont

Cheddar cheese. From the Cabot Creamery. Get the stuff in the plaid wrapper- not the green, not the black, not the red, the plaid. And it's Hunter's Cheddar, not "extra sharp" like all the milk toast marketers want to call it. Dang cityboys will ruin anything...

Maple syrup. Get grade B. More flavor, not quite as clear, but less expensive than the Grade A stuff that we sell to tourists. Trust me. Just make it a small operation, not someone like Maple Grove. Go to the guy who boiled it.

Any of our small honey ranchers.

Not every cheese maker is part of the Cabot Co-op, we've got a lot of very small indies. They range from good to you have permission to die happy.

Cider donuts.

Any of our fine micro brews, or even our micro distilleries.

Venison. Not beaten and fried, that ruins it. Cook it slow and moist- a little red wine will do, so will a good beer.

Tis' the season for apple picking. Get a bag, pick them yourself.

McKenzie natural casing hot dogs.

Go to the farmer's market, find a local bakery. La Panciata if you're near the Montpelier market, tell the tall drink of water (or his ginger-elf sidekick) at the booth that Raven sent you. Get some fresh butter from a small booth. Use your knife to put some butter and some cheese on your bread. Maybe a slice of apple. Vermont honey if you want some. Or a local made jam with that butter and cheese.



And honestly, I know a lot of people who were part of the Great Hippie Migration of the 1970s will be shocked by this, but you can skip Ben & Jerry's. Neither of them are Vermonters, they have a lot of money for guys who claim to be soSmurfpillsts (and still sold out to Unilever) and they have a lousy environmental record. Only (most) of their milk is from Vermont, almost none of their other ingredients are.
