I saw this challenge not long after it started - And by a strange coincidence I was making burgers that night
So I took my piccies - But forgot to post - Anyway just squeezing it in at the 11th hour.

But I wanted to tell you my burger making hi-story.

When I was a kid in the UK we frequently had barbecues but never made burgers
We often had burgers - but they always were bought in a pack from the supermarket 
As an aside at that time I had never heard of MacDonalds either :o - As they had not really hit the UK - yes I am old!!
As someone mentioned earlier we had Wimpeys

Anyway page forward a few years and I was bumming around the USA and ended up in Galveston Texas and got a job in a restaurant
Guess what my job was? ...... Yep ...... Making burgers - We made them from mince, or should I say ground beef - and no other ingredients
We were taught to make the meat into a ball then slap it around from hand to hand for a minute or so to make all the meat bind together - It works really well
They were served on a bun with ketchup on one side and mayo on the other - and with a piece of iceberg lettuce a slice of tomato.
Very traditional - And they were good!!!
You may recognise the construction below !!

Since then I always make my own - But usually throw a few other ingredients into the meat - Salt pepper, paprika and onion on this day - As you can see!!
But I have the good ole USA to thank for teaching me how to make burgers

You may recognise something in the second photo - This was not a set up at all for MTo - I had to use the pin in the Cybertool to unblock a few of gas jet holes in the bbq

And my second entry

Very similar recipe - I hope I don't get disqualified - But threw in some grated carrot and chutney into the mix - Bun the the same

Strangely the burgers to me at least seemed drier - I was expecting lovely moistness from the carrot and chutney - So not sure I'll try that again
Oh and my fussy son will not have the healthy salad in his bun.

Huntsman,

Great history!  Loved the stories. And I hope you are passing on your burger skills to the younger sharks.  :tu:  Those burgers looked great.

EDC = Every Day Chef knife ..... right? (in no way that was meant to be 'click-bait'.....)

And the strict rules... Yeah, I was a bit of a basterd about that, partly though so guys could get in multiple entries like you've done today.  And partly for a touch of madness. Hey, the spouses need to get a laugh in, once in a while....

Due to the vagaries of fate, I have not been able to cook any more burgers this week.

I did go out to a pub for lunch for a burger (Aussie style, of course - Beef, Bacon, Egg, Cheese, Tomato sauce, Mayo, Beetroot relish, tomato, lettuce )

I reckon my home ones are better. They might be a bit messier, but they're a lot more generous, and I reckon more full on for flavour.

I might be able to squeeze some in for lunch today, but I'm not sure how the timezones work and if that'll be too late.

On an unrelated note, I'm not a huge Little Creatures fan, but I do make an effort to visit their open brewery/pub whenever I am in Freo  :tu:

Well... not to blow my own trumpet or anything, but I really excelled myself this evening... I also made some excellent burgers!  :2tu:

Lamb and Kalamata Olive Burgers (with thyme, mint, mushed garlic and a splash of rioja) on ciabatta with mayo, humus, tzatziki, iceberg lettuce, piccolini tomato, feta cheese and... streaky bacon, with extra tzatziki and a sort of Greek style side salad.





After a few disasters lately, I was well chuffed with how well these worked out - they were quite delicious actually... even Mrs Fuzzy said so!  :tu:

Anyway, I think that's me done with burgers for a while...  :facepalm:

successful surgical incisions in my patties, got the cheese inside and its chilling in fridge, so far so good, but it was difficult. more to follow:

I couldn't let Fuzzy steal all the glory here....

With a bit of last minute effort, I was able to sneak in my attempt at a veggie burger this evening. 

My 'recipe': Roast sweet potato, black-eye peas, chopped green onion, grated carrot, and chopped parsley. This all got mixed together with some salt and chili powder. I tried to leave a few beans intact.

After that was mixed, I added a beaten egg and some chickpea (garbanzo bean) flour. The egg to bind, and the chickpea flour to stiffen the mix up.

This all sat in the fridge for a couple of hours, where it did indeed form a stiff mixture. The mix go formed into patties and fried in a cast iron skillet. I got the skillet fairly hot because I wanted to form a good crust.




The patties got topped with a sharp cheddar, which melted nicely. Then they got plated up with onions, catsup, and butter lettuce on ciabatta rolls.




The first bite was great!




.....but...you can see the patties got squashed and I ended up with a bit of a 'blow-out'.

Undeterred, I jammed the 'burger' back in the bun and continued to munch away. These were messy, but proved to be very tasty and filling.

Mrs Nix insists that we have them again..... guess that means she liked hers, too.   :dunno:

Next time, I'll pick a softer bread.   :D

nice one Nix and every other recent entry looks yummy. was kinda tough shoving the cheese into the pattie, I'm hoping its enough cheese but I may put a little more on top cause I'm a pig  :D
