Old Hickory Butchers Knife

Heres a Old Hickory Butchers knife that I finally got around to sharpening.  It has "scandi" grind to begin with so I stayed with that bevel.  These knives come up quickly with little work.  The edge produced is very wicked.  I'll sand the wood and treat with Linseed oil.  I really want to remove the handle and add my own.  I just dont have the materials.  Micarta would be fun to try to make.  I'd like a bit more width in the handle.   Wave and Micra for size reference.

I use an Old Hickory in the kitchen. 

As you said, these high-carbon steel knives take great edge. Mine had a secondary bevel and I just stuck wit that. It's a great slicer, and brilliant with 'butchering chickens, ribs, watermelons, cantaloupes, etc.....

I prefer a chef's knife for dicing, but the butcher's knife will get the job done for slicing.

The scales on mine a re a little loose now. I keep waiting for them to fall off so I can replace them myself. But....they keep hanging on and are perfectly useful, so it stays as is for the moment.

These knifes are relatively inexpensive and a great deal.  :tu:

Interesting.

There's strong evidence that the old mountain men and early cowboys of the American west carried these kinds of 'Butcher' knives as field knives and skinning knives. It makes a lot of sense for Old Hickory to reprofile the venerable Butcher's knife into a Hunting knife.

Here’s mine I’ve had a while now. Would’ve liked one from before the blade stock was thinned down though.

My son has an Old Hickory and he loves it. Still has it after all these years. And still uses it.

Pretty neat.  The sheath is a great idea.  I have seen some who think this thin stock blade will replace a chopper  :facepalm:.  If used for the proper task in the outdoors its a good inexpensive knife.  Yes it will punch above its weight class but within reason.  If the price point on the blade and sheath is decent I can recommend it.  I have read of certain sheaths people but for the this knife but I've yet to pick one up.

I'll probably buy one of the Hunters when they make it to the dealers shelves. Looks like it will a good knife.
