Reverse cook to 125 degree internal temp then finish in 500 degree oven to crisp fat cap.  We do Xmas eve dinner and this has been requested every year.  I'll also like to offer a seafood dish as well.  This year it will be a version of Cioppino.  We're likely gonna have a rainy week so I thought that would be nice.

Other than the world turning to smurf, I'm doing OK now.  Having the worse mass murder in Canadian history happen in my province, and end just minutes from my house hasn't been easy to deal with.  I knew the officer that was killed, and a few friends have lost family members because of it.  Pretty emotional times around here right now.  :cry:

Like life isn’t hard enough right now with the virus

I have just started getting into lock picking
And slowly getting better at it but

I can’t see why I shouldn’t be aloud to go for
a bike ride on my own on nearly empty roads
And there is no one around me within the two meter rule

I read that they don't want people out on motorbikes here either.  I guess it's because there's a greater chance of a biker getting hurt and needing first responders than someone in a car.  While non-essential travel isn't banned here, it's strongly suggest that you only travel if it's needed.

Parks, trails and beaches are closed here, yet you can go to Walmart and stand in lines.  I think they've gone too far with some of the restrictions.
