Day 25


Here are my 2 Opinels - a No. 8 and a No. 6.  The 8 was my first.  It's from the "Colorama" series and has a "painted hornbeam handle" (black); however, it feels like plastic.  The blade is VERY difficult to pull out.  I think it might be due to the pivot point being too crooked (see pic).  The No. 6 has a walnut handle, but it looks too light to be walnut.  The No. 8 feels about the right size for me, but I normally prefer smaller knives like the No. 6 when I carry them in my pocket.

The CARBON is the original steel. It sharpens to a fine edge. 

I however, find that my Opinels (No8 and No9) find use in the kitchen doing food prep, the INOx (SS)’excels and clean up much nicer.

I did perform a white vinegar dip (about 5 minutes) with a couple of my CARBONs models. Seems to protect the blade and limits taste transfer.  And forces  patina unto the blade steel, darkening as well.

It appears on your No8, the bottom part of the pivot is over clamped and missed the quality inspection.   I would send a email to Opinel for options.

It also, appears your No6 missed the staining process, or is another wood type and got packaged wrong.
But, I like it regardless.

And, after deep thought to respond to your question.

The GARDEN KNIFE, (top) is my favorite!  I can carry in a neck sheath when out working in the yard for easy access. And, yet it out running errands, it fades away into my pocket.

The Effie’ was just received, but was acquired was for pocket carry when eating out, as I often encounter dull cutlery at establishments that should know better.
This style about the same size as a sturdy writing instrument. 😎.     My stockman does receive some looks, plus it requires a bit more to clean up.

Tested at home slicing chicken, it did very well.

This is one of my favorite slip joints. Spanish made Joker in carbon steel with olive wood scales. I've had it for a few years, and just bought another one this week that is supposed to arrive today. The new one is also carbon steel, but with Bubinga wood scales.

Inox over carbone for me.  I’m not one to be cleaning and oiling my knives after every use, and carbon steel  (and even some stainless) seems to fare poorly in my sometimes sweaty pockets.

Late in the day required quick trip to Eye Place for my new prescription glasses since new lenses replaced ORIGINALS do to cataracts.

No to get use to these no line bifocals.   Since surgery good with readers with sight to about 18” from my nose. Blind from 18” to about 5 feet.  Beyond 5’ no correction required.

Surprising they have not figured out how to make replacement lens that duplicate what you are born with. 🙄

I've carried and used carbon knives for over 50 years. I don't and have never cleaned them after every use, and pretty much never oil the blades. I might occasionally (once or twice a year) add a drop of oil to the pivot for lubrication of a knife I'm actively carrying, but I do the same with stainless blades.

My BIL showed me his CV Case recently and it did have some small patches of rust, but the blade was also bright with no patina. A patina, either forced or natural from regular use, acts as a protective coating.

No, I don't. Only some of them. If I cut food with them pretty often, it doesn't take long to develop a natural patina. I usually rinse them before and after cutting food, then just wipe dry with a paper towel afterwards. But for just daily carry I don't treat them any differently than my stainless knives.
The ones I never or rarely cut food with are the ones I am more likely to give a forced patina, because they have less opportunity to develop a natural patina.

I consumed caffine after 6pm last night, and, sleep did not come quickly.

So, I found myself in my upstairs office, and was putting items away and checking organization of a few knives and came across a large stockman I put away and forgot about.  Then another,  Medium Jack!

My favorite traditional knives to carry are small, but not too small.  This is one of those Goldilocks knives for me - a Buck 055.  This knife and my Buck 303 are my favorite traditional knives to carry.  Anything larger, and I like something with a pocket clip.

The new Joker showed up! Top: old with olive wood, bottom: new with Bubinga wood. I don't think I forced the patina on the old one. Maybe I will on the new one, for comparison.
