Specifically Cajun Chicken breast. YUM!
Cooked till exactly 165f and then
Charge AL pliers used for inserting and changing the temp probe and then the blade for 'slicing' (hence the thick cuts, I hate hollow grind for food).
I'll do my homemade pastrami next if there's interest. :)

While I'm at it and on the fowl theme, homemade smoked turkey breast.
My wife bought me a Weber for a birthday present last year, such a great gift!

Oh and cyprus wood is a pain in the behind to get burning. Next time I'll split the branches first and dry them out for an hour.

Thanks! Is it good form to start threads to win awards? I've got lots of stuff I can show and talk about but don't want to spam the forum.

It is a rule that you start you start a new thread generally. Also, don't worry about spamming or thread derailments. We thrive on it. LOL!

Best bits are the off cuts!
-
Did I mention a salad to go with it?
Spicy Moroccan chickpeas with pickled cucumbers and hot peppers.
-

Looking sooooo delicious! :tu:
-
Some good bread is necessary for pastrami...
-
Been a busy couple of days outdoors in the sun with the smoker and steamer but there is now some 6 times this amount of pastrami stocked up.

Sooooo good! I sent some down to a neighbour who had popped in this morning to warn me of a smell of smoke and were we sure there wasn't a fire? :D She knocked on about half an hour with a notebook and pen begging for the recipe. She got a bit put off when I explained about brining for a week prior, smoking for 6-8 hours then steaming for some 3-4 hours after that. :D Pastrami is somewhat of a faff but it all becomes worth it with the very first bite through the crispy spicy bark into that soft red goodness.
-
Some more pastrami currently at stage one, the smoking:
