This is a video of one of the guys who went through the cutting course at this years cutting competition.

that looks like fun! I have a couple a blades that'll do that :D

What the heck was he using and I will bet he had to use his other arm for lifting the cold brew he had earned

Looks like a cutting comp knife to me (usually 5 inch handle, and a squared off 10 inch steeply convexed blade :), the rules say the knife can be no longer than 15 inches overall ;))
