Welcome to the first Big Burger Challenge!

Everyone likes burgers, everyone has a recipe, everyone has a favorite take on the burger. Now, your special recipe may be the key ingredient in winning a new EDC...speaking of which...

Here is the prize: a NIB Victorinox Every Day Chef’s knife:

Here is how I’d like to run this give-away, one of my whackiest yet….. :facepalm:...I know....

1. The contest will run from Jan 01, 2019 to Feb 15, 2019. This lengthy span should give people a bit of time in which to meet the complex, but tasty requirements.

2. Participants must have 16 posts, before entering. Sixteen, as in 16oz in a pound of ground (minced) beef.

3. To enter the contest, please submit a photo of a big burger that you have made. Might be small in size but big in flavor. Or maybe you like a triple decker. It doesn’t matter, as long as it is your burger. Or burgers…..
    — photo should include evidence of the date you made it.
   — photo should demonstrate evidence that a human took a bite of said burger, thereby proving it is edible.
   — phoning out for delivery, does not constitute ‘making’ a burger, but you can get help in sourcing ingredients or making the burger. Even if you can’t cook, you may know somebody who can. Get that person to help make it.
   — entries should include a list of the basic ingredients used in your burger, but you don’t have to reveal family secrets if you don’t want. For example: “This burger was made with ground beef and secret spice blend, grilled over charcoal, and served with a slice of cheddar on an Onion bagel.”

4.   Your burger can be made from anything you choose. Omnivores should feel free to use the burger meat of their choice. Vegetarians can submit veggie burgers; Vegans can submit something worse.

5.   If I have a question as to whether or not a submission meets the universal standards of a being a ‘burger’, I may challenge the entry. I’ll clearly post, “That’s NOT a burger!”.  If three (3) other MTo members disagree, believe the submission is a burger, and post that they approve the challenged burger, my challenge will be overruled, and the submission will be accepted.

6.   Participants can submit up to six (6) entries. That would be one entry for every week of the contest, but there’s no saying you couldn’t just submit six entries on the very last week. The caveat here is that each entry must be a unique burger with a unique date, and use ingredients or a technique that differs to some degree from the previous entries. The exact same burger cannot be entered more than once. Something about each of your entries has to be different from the previous entries. Surely you like more than one burger?

7.   I’ll keep a running list of successful entries posted. Feb 15, 2019, around dinner time, my time, I’ll pick a random winner from the list.

If questions arise, please post them here in this thread for clarification.

This was a beef burger seasoned with salt and a secret spice mix (ground caraway seeds, dill seeds, black pepper, cayenne pepper, celery salt, and garlic powder). I cooked it on a grill with hickory chips providing a little extra smoke.  Added swiss cheese while it was still on the grill. Dressed the burger with mustard, a touch of mayo, and a few pickled onions.

This is tempting in so many ways! Very nice and generous GAW, especially since my gf complained about our kitchen knife yesterday.. I love a good hamburger and this gives me another reason to make us some, and to see awl you others ways of making burgers and learning new things.. I will just stay here drooling for a bit

Great GAW !   I'll sit this out as I'm all set on Kitchen knives  :tu:

I have the 10" version of this knife, had it for years and used it when I worked in a restaurant as a prep cook. Back then they were branded "Forschner"  named after the guy responsible for importing them to the US from Victorinox. They were the workhorse of many restaurants I worked at.

I think it has to do with bread slices vs. burger buns as to what folks call it. Not to be confused with a mushroom burger which is a standard (?) burger with mushrooms added. Which is weird because I don't think a portabella on a hot dog bun could ever be considered a hot dog.  :think:

I'm no burger-master; and if I can make a good burger (and Mrs Nix thinks I do), then anybody can. So, nobody should even start to think they can't play along in this challenge.

I might give it a go, but no guarantees, I like veggies and never was compelled to join the meat substitute crowd like a lot of noob vegans, and I don't like tofu or kale either.  :D It's a texture thing I think... The portabella one sounds good though, so it's possible!  :tu:

I have no idea a how to call this meat in English. It's 50/50 pig/cow ground beef??? (Or only cow? It's been a couple of months, hmmmm…) Just some pepper/salt, garlic en bell pepper powder.
Cheddar cheese, hamburger bun, ketchup, onions, tomatoes and lettuce.

Ohhh.....Serena.....that looks excellent! And I love your beef-pork blend!  :drool:

But, sorry, .....the burger needs to be made during the challenge period. Your post made me realize that I wasn't specific enough about that (although, that's why I wanted to include time stamps.).  :cry:

However, don't worry that your grill is put away.... The famous American Chef James Beard stated that the BEST way to make a burger is to sauté the burger patty in some butter on the stove top in a skillet. So.....PLEASE...make another burger for the contest! You clearly have a good touch!  Hey, why not make six (6)!  :tu:

actually that gives me an idea or 2 to experiment with having burgers during my weight cut. and there is the grill pan that could use some new recipes

yeah Nix, anyone name Beard has got my vote lol, but I do make most of mine on the stove in a frying pan with good results, 4-5 minutes per side.  Very nice looking knife, thanks for the GAW  :cheers:

Perfect timing had some fresh ground beef from the Amish market and was making burgers tonight

Just salt & pepper mixed in and formed some patties by hand

Into the frying pan with a little melted butter, about 5 minutes per side over med/high heat(lower heat a bit after you flip)

(As for the prize itself, for anyone interested - I have no idea what sort of criteria (or bribes) Cook's Illustrated use to pick their winning knives, however I can say the Vic Chef's knives are very decent (especially for their price) They are very popular with apprentice chefs, and plenty of them use them throughout their careers (the ones that just want good, easy to use, easy to maintain quality knives with a comfortable grip for daily use.) They're also pretty popular with the aging crowd as the largish handles and light weight makes them wrist and grip friendly.

They're a great addition to the kitchen, and if you don't have kitchen knives that bring you joy already, winning this will make you look forward to hacking up innocent vegetables or slicing some meat.

Actually, I think you've posed a rather interesting question.

I don't know if it's just a Scottish thing, but I remember when I was little, when we went to Wimpeys the burger always came on a plate... with NO bun!  :ahhh

(Although, this does raise the tricky issue of trying to establish a difference between a bunless burger and the old Salisbury Steak. I may be inviting disaster here, but let's consider the bun classic, but optional, especially for the wheat-intolerant.)

(Although, this does raise the tricky issue of trying to establish a difference between a bunless burger and the old Salisbury Steak. I may be inviting disaster here, but let's consider the bun classic, but optional, especially for the wheat-intolerant.)

Now, if you guys want to insist that a burger must include a bun....I'm open to tightening the rules up. I think we'd need at least three members to say "A burger must include a bun". And, I'm going to disqualify Blackbeard from being one of those three members since, as the only active challenger, he has a conflict of interest.

Well, I'm afraid the debate is over.....

Mrs Nix has resorted to the nuclear option.

As she has a personal view on this matter, and generally prefers a "No Bun Burger" (see additional posts below), she has unilaterally declared that meat or veggie patties served without buns shall be considered "Burgers" for the purposes of this contest.

You guys don't want to be on Mrs Nix's list. So the current rules stand. Sea Monster, your burger is admissible (assuming you've met the other requirements.  ;))

Blackbeard’s post pretty much covered the tutorial I was going to write. If you are worried you can’t make a great burger, re-read his post above. I thought I’d add a few small tips to what he said, for those who are just getting started.

I’m no chef, and can only offer up what I do, so take my advice with a grain of salt. (Sorry, couldn't be helped.)  We do have some talented cooks in our midst, and I hope they will chime in here and offer improvements to my techniques or corrections to any misinformation I may inadvertently pass along.

The burger I made this evening is about as simple a burger as I make—I don’t think it gets much easier. Still, it tasted great!

Making a burger is no more complicated than 1) forming a patty, 2) cooking a patty, and 3) putting said patty on a bun (or not).  Nevertheless, there are few ways to make a better burger:

Beef is the classic meat for a burger, use what ever you want, but some meat with some fat in it will make for a tastier and juicier burger. An 80% lean is great, 85% lean is fine, 90% lean can start to get dry.

Fresh ground beef is the best. I’m using regular beef out of the meat case here, but you may get your butcher to grind some meat for you. Either chuck or a chuck and brisket blend works well for me.

Keep your ground beef cold. This is contrary to the usual advice for grilling a steak where it’s better to let the steak come up to room temperature. With burgers, keep your meat cold until it hits the heat. This way it won’t lose fat or juices.

In general, when forming up the patties, try to use a light touch. This isn’t bread, you don’t need to knead it or mash it. Gently coax the patties together and shape them  to the size you like. Here are my patties, honestly I think they got a bit overworked, but they turned out just fine:

Note that with these patties, I tried to make the center a bit thinner or cupped. As the burgers cook, they will shrink and puff up a bit and even out on their own.

It’s a good idea to form up the burger patties and then put them back in the refrigerator for 30-60 minutes. This lets the newly formed patties come together and set up. This will help keep your burger from falling apart in the pan or on the grill.

In general (there are exceptions), I don’t season my burgers until right before they go on to the grill or into the pan. With steak, you definitely see some benefits from pre-seasoning. With burgers, you’ll get a better crust if you season at the last minute. But do season, at least with salt!

Here my patties have just come out of a 30-minute rest in the fridge. They got sprinkled with salt (nothing else!) and are going to go into the pan.

I like using a cast iron pan, but use what you have. I like a medium-high heat. You want to have that burger start to sizzle when it hits the pan. I put a little butter (olive oil works well , too) in the pan and it immediately started sizzling and started to brown: time to get those burgers in!

In the above photo you can see the one burger is sizzling nicely. The other not as much. Don’t be tempted to mash down on the burger! You’ll only squeeze the good juices out.

Instead, I moved the pan over a bit to heat the slower burger up, and shifted the slow burger over a bit. After a couple of minutes I also gently rotated the burgers about 180º to ensure even cooking.

Doneness can be hard to judge with a burger. On a hot grill, I’ve found that I only need about 3 minutes a side. It takes a little longer in a skillet. When you start to see clear juices rise up from the top of the meat, that burger is done! Remember, a very thin burger will cook through more quickly than a big fatty.

Some red juices started coming up for me now, so I flipped my burgers over. These have a good crust. That crust comes from a good hot pan and some salt right before they went into the pan.

Again, I started looking for those juice to start coming up (sometimes out the side). The juices were starting to clear, and a poke with the spatula told me the meat had firmed up. Now I put my cheese on (sorry no pic, but you know what cheese looks like.) To help the cheese melt, I put a wok lid over the burgers—the steam formed by those juices will melt the cheese. This step is not needed, but I like to do it.

I couldn't camera & cook at the same time, but here's my burger.

I forgot about the proof-of-date thing, so you can see a receipt from the shop that bought the ingredients in a photo after I've started eating it, (with my beloved spidey) and a close up of the date.

Bottom left of the burger-shot is the nose of someone who did nothing at all to help, but seemed to feel entitled to reward.

As a concession to the bun crowd, I topped it with a hashbrown.

Burger includes fried egg and beetroot, however I forgot bacon, so it does not meet the standard to be codified as "Australian"

patty is beef, secret spices, egg and coconut flour.

I will make her a lovely bunless burger. I'll include a nice glass of cabernet and a side-salad. Perhaps a slice of chocolate cheesecake to finish. (Chocolate cheesecake goes shockingly well with a second glass of cab.) I'm sure she will see the light, and I'll be off the list in just the time it takes her to chew one bite. 

However, don't count on her returning to damp and grey Britain with it's soggy buns and flavorless burgers....... just fair warning.... :whistle:  Still, I don't want to stay on her naughty list, do I?

First ever attmpt of making a burger. Not sure about the result but all 4 are gone so I guess something was done right.

Couldn't find any tomatoes so those are missing. Now shall we begin?

The big part of a good burger for me is the sauce. No I do not like ketchup. It is just a bit of tomato paste with a ton of sugar. So I used the ancient family recipe that dates back to about 11 in the morning today when I figured that part might be a bit problematic. This recipe is a 3 ingredient one, mix to taste and in all honesty it might need a bit of lime or lemon juice.

Yes those really are the ingreadients. Sour cream, sirarcha and Cholua. Gave a delicately spicy flavor that didn't overpower but certainly opened our sinuses.

Considering that I've preped the burgers and had them cooling for about 15 minutes before the pan I had a chance to prep everything so this was the state of the kitchen right before the magic moment

I'd say it is a pretty standard thing but considering I've used ground turkey, no onions and tomatoes, and that was mozarella melted over the patties I'm not sure this qulifies. But the burgers were still juicy, manbe needed a bit of extra  zest and they vanished quickly so might not be a bad first try.
Next time I'd actually like to make my own buns as these didn't agree with being grilled a bit on the pan and started sticking.  Thankfully I noticed the first one was getting stuck rather than getting grill marks and even that was quite early so it didn't get ruined.

It was the first time I mixed in bacon (courtesy of my brother in law) I usually wrap them but this was really good and the taste was great! I would like to have a bit more chilli but it was good anyway

I think it's time for...

Well... unfortunately I had to go out for a bit so Mrs Fuzzy had her veggie burger while I was out... and didn't take a picture.  :facepalm:

Anyway, I got cooking as soon as I got in. A little oil in the pan, fried the bacon to get the fat before putting in the burger and a little falafel patty just to see what they were like. Looks greasy in the pic, but ah... it wasn't - it was all cooking away nicely.

So, Beef and Thyme burger with mature cheddar, lettuce, tomato, pickles (must have pickles, can't have a burger without pickles, good pickles at that), streaky bacon, frenchies mustard, tiny bit of mayo on a nice lightly toasted brioche bun... with chunky chips and beer batter onion rings. I'm not always keen on Ketchup on my burger, depends on my mood, so had it on the side with the chips instead. Also, I would normally have skinny fries, but I just fancied something a bit more substantial.

Well, I do get a mug of coffee! If I miss that I will get a headache like I don't know what.. And after a few hours I usually go for eggs and bacon on work day

Standard burger fixin's, except the vegan mayo (which is fantastic btw), and had a tough time finding vegan friendly burger buns, but not impossible. I would also usually add lettuce, but skipped it this time. All I need are the patties now!  :salute:

Before and after of the portabella, I prefer to grill them, but this works too (covered). I used olive oil and sprinkle a little salt on them. They take longer than ground animals, and shrink more, so I had to choose buns accordingly. My trusty flat grind Endura gets food prep duty anymore, I still keep a Climber in the kitchen drawer, but for other than slicing.  :tu:

I've stuffed and grilled portobellos with a garlicky pesto and grilled them. Good stuff.  Portobellos are so versatile!

This one is a little bit different, still beef, (still no bun). Patty is a bit peppery this time, just black and white.

I wanted to make the "bun" out of eggplant, but my eggplant wasn't big enough, so it's just got eggplant slices, still has lettuce (rocket), cheese (cheddar) and egg (chicken), a touch of paprika on the egg, served with sprouts (not quite thick cut beer battered chips, but what can you do), I went for horseradish cream for the condiment, adding to the over-all zingy flavour.

Earlier I think I mentioned I had planned a turkey burger for this GAW thread. Let's see if this works for you guys.......

Turkey is shockingly low in fat, so I figured I'd do a couple of things to try to keep it moister. I added an egg, some ginger juice, and a few bread crumbs (to soak up juices). For flavor, I mixed in a bit of salt, pepper, garlic powder, and chopped green onions.

This was a case where I did try to mix the meat, spices, and onions together. However, I thought that some of the additions would keep the burger from being to dense (and that seemed to be the case)

While the burgers were chilling, I made a Satay-style peanut sauce. (Peanut butter, soy sauce, water, crushed garlic, pinch of sugar, juice of a lime, etc.....)

With Turkey burgers (all burgers really), it's important to make sure the grill is clean and hot, otherwise you may be facing a bit of a mess......  I seemed to get thing dialed in this evening:

Now....I'm sorry to say I inadvertently deleted the photo of the burger all assembled, but with the top bun off so you could see the whole thing before I took a bite. I topped the burger with peanut sauce, cucumber slices, shredded carrots that had been 'quick pickled' in rice wine vinegar, cilantro, and some hot sauce.

As you can see, I got a bit enthusiastic with the peanut sauce (#becasuepeanutbutter), but the whole mess was great. I served steam asparagus along side the burger in stead of fries. The asparagus was great with the peanut sauce. Mrs Nix again opted for no bun, but declared it one of her favorite meals ever. I'm not sure about that, but for a turkey burger, it seemed mighty fine and flavorful.

In hindsight, a sturdier bun would have been helpful, but the cheap white bun did the job of conveying the tasty burger to my appetite. One idea for the next version of this: a teaspoon of Madras curry powder mixed into the meatloaf burger mix. Oh, I think that idea has legs......

p.s. For those considering entering the contest, you don't need a whole bunch of photos (although everybody has done an awesome job so far of documenting there burgers). The only require photo is the "bite photo" as pictured above.

I went basic with this one...its a 2am snack after all.
The burger is marinated in equal parts steak sauce & worcestershire with a dash of ghost pepper sauce; easymelt queso is poured over it; all on a griddle toasted bun
(yes I always leave a griddle on my stove just for toasting, quesadillas, and pancakes)

The whisp in the bite pic is not a lens flair...the burger was still steaming(took 3 tries to catch it)

Edit:
 EasyMelt is basicly the local brand Velveeta & has a little tomato & pepper in it.

Had to Google leeks.. Used some in today's dinner, not a big fan of the taste of its own but in stews it does do a good job so I might try that

I prefer green onions. Sharper flavor and the y are easier to chop and cook.

I love leeks in soups and stews!

That Ghost pepper sauce sits nicely in the back when you mix a small ammount in with other stuff. Use a lot and it burns upfront, use a little and you taste everything else first but still get a but of spice at the end. The nice thing is it just adds heat, not peppers or vinegar like other sauces.
 Its hard to descrine how much I used since I shake it on by look. So to figure it out without wasteing Im making nachos.

So Easymelt, 2tbs butter, a shake each of chili powder & taco seasoning, 1/2tsp hot sauce and just enough milk to keep it a thick liquid.

In the end I think I used somewhere between 1/4-1/2 tsp to 1ea tbs of the steak and Worcestershire sauces for the burgers...yes I did more the same way this afternoon (just spicier)

On a side note DO NOT touch your face or rub your eyes if you havent compleatly washed all traces of the sauce mix off your hands....ask me how I know.

I know this challenge is going a bit slow but it could be that people don't make hamburgers too often

We'll see....

I've had fun and I've loved everybody's entries so far. So I'm quite satisfied. I have three more burgers I plan on making before the end of the challenge. I expect I'll do a fourth as well. But who knows? Life happens and I may not get to do all the burgers I'd like to. On the other hand, I eat pretty much everyday, so between now and Feb 15th, I think I should be able to get a few burgers in.  ;)

I call these rather unimaginatively British Burgers as I've replaced a lot of the usual affair with lots and lots of hot horseradish sauce... and some greens including watercress... and even more horseradish sauce on the side. The burgers themselves are just good quality minced steak, mushed garlic and salt... fried in butter.

Once I got over the pain, they were quite delicious... well done to me!  :D

Indeed. I grew some ghost peppers in my pepper patch last season, and I sliced the first few without gloves. I know better than to put hands to eyes (or elsewhere, omg!), but I never had peppers burn my hands like that before, for 3 days after multiple scrubbings!  :facepalm: They sure were tasty though, and hot? Wow.  :tu:

Speaking of burgers....

I made Portobello burgers for dinner this evening. These are alway juicy 'burgers' and so I made sure to get some good rolls (ciabatta rolls from the local bakery) to handle all the juicy goodness. The plan this evening was to grill the mushrooms, stuff them with herbed goat cheese, and top the burgers off with roaster peppers. A little garlic-mayo would serve as a sauce for the buns.

Step one, marinated the mushrooms in a vinaigrette. After the 'shrooms had marinated for an hour, I set them on a plate to drain any excess oil. Since these were going on the grill, I did want to many flare-up due to excess oil.  :tu:

While the mushrooms were bathing, I roasted/charred some red peppers--oh, my these smelled great!  Once the skins were nicely charred up, the peppers went into a paper bag for 10 minutes. This let them steam a bit and the charred skins just slipped right off.

Despite trying to drain off any excess vinaigrette, I still got some flare ups. I just moved the Portobellos around to avoid any direct flames.

Soo many burgers! I will have to save this thread after the GAW for inspiration!

Today's burger are beef mixed with garlic, pepper, salt, chilli, an egg and dried breadcrumbs and then wrapped in bacon topped of with red onion, salad, champion, cheese, dressing and ketchup. I forgot about the timestamp when I took the pic. I will include the phones timestamp details but if that doesn't count its no problem as I already have an entry.

So here's one of the burgers I made the other day... I'm not much of a cook but the lady asked for a burger so I obliged.

Unfortunately the bread was store-bought. Still pretty good though.

I used 100% ground beef to which I added homemade lacto-fermented ketchup and curcuma(/turmeric), pink Himalayan salt, black pepper, dried garlic and onion, piri piri chilli, dried coriander and rosemary (freshly ground in a mortar). Cooked in a pan with greek olive oil.

Bottom part of the bun covered with lacto-fermented ketchup, the spiced beef, a slice of tomato and two of cucumber, lettuce then mayo under the top part of the bun.

It was quite a success. The lacto-fermented ketchup has this natural and subtle taste of vinegar that married well with the spices...
The lady was still talking about it two days later :D

I want to preface my entry by saying I completely botched my bite/timestamp photo and ate the delicious evidence without checking to see that pic is too dark  :cry:

Anyway, here it is, Asiago cheeseburger with carmelized onions:

start with 5 medium/large yellow onions

1/2 way home, sauted with olive oil and butter, salt and sugar, dashes of water to keep from drying, start on med high for 10 mins, reduce to med low for 45-50 mins.

 :iagree: It's very common in Scotland too (or at least used to be), to get a burger or especially lorne sausage in a roll (bun, bap) topped with fried onions. That's normally how we had them when I was a little kiddie.

I have to say though, Blackbeardy you've taken it to a whole new level with that one - it's like French onion soup... in a bun... garnished with burger!  :hatsoff: :like:

Here's another take on the Burger:

For these, I mixed some minced beef with mashed garlic, salt, pepper, and dried thyme. I tried to be gentle when mixing in the spices and thyme--I didn't want to over work the beef.

After the beef was mixed, I added some 'country sausage' made at our local butchers.  I use a 2:1 ratio of beef to sausage.

The patties got grilled and the top was glazed with a commercial BBQ sauce. The above pic is what my patties looked like when they came off the grill. It was dark and snowing outside, so action shots on the grill didn't work out.

Mrs Nix vetoed buns for these burgers, so we went bunless this evening. If you've ever been to Maryland or Virginia or North Carolina, you may have run into a "pulled pork sandwich". This is a mass of shredded BBQ pork in sauce served on a cheap white bun or cheap white bread and topped with coleslaw. Great sandwich, but often very messy. That's why Mrs Nix vetoed the buns.

So, I served the burgers straight up, with a purple cabbage slaw, and dusted with chile flakes.

Darn fine eating......but I still think we could have had buns.......

Since these had pork in them, I did make sure the got cooked to 'well done'. The sausage kept the burgers really juicy, so that wasn't an issue. And I like to be safe with pork. I know that's a bit old-fashioned, but in this case, there wasn't a down side.  :tu:

there was some internal debate as to what the difference is between a wrap and a burger, given they are pretty much the same, at a molecular level, but I felt that was going down  a path we didn't want to entertain (because then where are we? pasta and bolo is pretty much wheat, mince, tomatoes, pepper, salt...)

Anyway I decided to make something that was unquestionably a burger, and (as suggested by the pasta and wraps) I'm eating wheat again, here it is...


pretty standard fare - soft white bun, iceberg lettuce, truss tomato, brown onion, chicken egg, mushrooms, cheddar cheese, and I used mustard pickles on the bread.
Patty is beef - as others have said, I always go full fat. That's where the flavour is. Patty was just made with salt, black pepper, and an egg for glue.


I had to have the conversation with the wife about why I was so keen on burgers (or things that could arguably be burgers) and why I was taking photos....
She still thinks I'm a weirdo, but now I've talked up this competition and the chefs knife so much that if I don't win, I'm probably going to be sent into the chef supplies store in town to buy a new chef knife anyway  :-\ (most of our food prep at the moment is done with a 4" no name supermarket kitchen knife, or my muela hunting knife. Due to various circumstances, we both lost our sets and life being what it is, we've never got around to replacing them)

The recipe's author will not affect the outcome.

Only viable entries of actual burgers can swing the odds in your favor.

Right now, Sea Monster has the best odds with three (3) rock solid entires. I'm quite sure he's good for a forth before we hit Feb 15.

And I would keep an eye on Blackbeard if I were you. Blackbeard started strong and I have a feeling that he might finish hard after everyone is lulled into a false sense of security.

Noa has been quiet, though persistent. I note that he has two (2) excellent entries and is liable to strike without warning.

Borg had mentioned submitting an entry, but such a thing may have fallen off his radar. We'll see.

No, this is still a horse race.  Only, please, no one submit a horse burger.   :facepalm:

Just a reminder that there are still two weeks left...actually a bit over two weeks left...in this GAW challenge.

This evening I made my crowd-pleasing 'Souvlaki Burger'.  This is a burger I've been looking forward to since the start of this challenge. I've never released this burger recipe before, but I know I can trust you guys.....right?

OK, so starting with a Fuzzy-style ingredients shot, we've got ground beef, ground lamb, finely chopped mint and oregano, finely chopped onion, crushed garlic, salt, pepper, paprika, and an egg to help it all bind together. Oh, also gave it a squeeze of lemon juice...

This all got mixed up and formed into patties. Big patties. I believe there is no way Achilles could best the Trojans with some tiny 1/4 pound burger in his belly. So I went big. Very big. Like Greek gods big.

While the patties were chilling in the fridge, I pulled together a little batch of Tzatziki sauce: cucumber, yoghurt, garlic, lemon juice, salt and more chopped mint. (I didn't have any fresh dill, so I went with fresh mint. Apologies to Greece fo this substitution.)

After the patties had chilled for an hour, they went on to a medium charcoal fire.  This is one burger that demands real fire made with real wood. I didn't want to burn the outside while waiting for the thick burgers to cook through, that's why I went with a medium fire.

Sure, there was 2" of snow out back, but the heat of the grill melted it away. No problems.

So, my final burger: Ciabatta bun (toasted on the grill), Souvlaki burger, cooked tomato, and tzatziki sauce:

This thing was huge. I cut it in half so that I could get a decent bite shot. Even so, this was a gloriously messy burger. And decidedly delicious!  :tu:

When grilling a steak, it's enormously helpful to get it up to room temperature. You'll just get a more even doneness that way. However, with a burger, it's best to keep it chilled until just before cooking. This helps the meat hold together and makes for a juicier burger (because the juices and fats aren't as likely to run out).  :tu:

I've seen advice for putting your burgers in the freezer for 15 to 30 minutes before cooking, but I've never tried that, seems like a good idea (chilling) taken to excess.

I think the author is spot on with all of her tips. The exception being the 'use a hot grill' tip. I vary the heat of my cooking set up depending on the size and thickness of the patty. I do think it makes sense to get the grill grate good and hot, that helps the meat not stick.  I do cover my charcoal grill....most of the time, and especially in sub-freezing conditions in Winter.  I'm imagining that she likes to leave the cover off to keep the coals as hot as possible, but I like to trap some of the smoke in the covered grill to impart that smoky flavor.

Bonus burger for me! 

I had some left over ground beef (mince), and whipped up a 'breakfast burger' this morning.  Mixed the beef with diced onions, salt and pepper. Sautéed the burger in butter.

When done, I topped said burger with sliced cheddar and a fried egg (nice runny yolk..... :drool:).  The whole mess got served with a cheeky hot sauce from Colorado and a mug of tea on the side.

Now that's a breakfast!  :tu:

Todays entry is a Swiss cheeseburger with balsamic glazed mushrooms on a farmhouse white bun & waffle fries

Here are the ingredients:

80/20 ground beef formed into patties with salt & pepper lightly mixed in, a little salt on top and a nap in fridge.
thinly sliced yellow onions
thinly slice campari tomatos
Julieneed some kosher dill pickles
8 oz sliced white mushrooms
2 cloves garlic minced
balsamic vinegar
butter, olive oil
thin Swiss cheese
farmhouse white buns with sesame seeds

Saute the shrooms is some olive oil and butter over med/high until browned. add 2 minced garlic cloves & season with salt & pepper; saute 1-2 more minutes, than add 1 tablespoon of butter & 2 tablespoons balsamic vinegar & saute until mushrooms are glazed:

yeah, it was best tasting one so far, the mushrooms were mild, just a hint of garlic, so no flavors overpowered any others, I cant wait to try it again after contest is over...Now I have to go back to the drawing board and see if I can top this one  :ahhh

Nice burgers everyone! I have been lazy and bought raw but shaped burgers a couple of times this past weeks but it does not feel right to enter with those, so no pics. Good taste though

I prefer to make my own patties, Kottsie, but sometimes a man's gotta do what a man's gotta do.....  I've had some very good burgers at large parties or barbecues where the demands of feeding a couple hundred people compelled the use of ready-formed patties.

The rules don't prohibit using a pre-formed burger patty. As long as you make a tasty burger, who could object?  :dunno:  Post 'em up!  :tu:

Why didn't it work out?

First off, I was feeling too lazy to grill. It's been -20ºC or thereabouts all day and the grill is covered by several inches of snow. While I knew that grilling the burgers and pineapple would be best, I played it safe and warm and just used a cast iron pan on my stove top.

Mistake two:  I didn't have proper pineapple rings. I used some canned chunks of pineapple, which were very juicy. I reasoned that I could blend my pineapple chunks into my chili-catsup mayo  and achieve the rich flavor profile. As a result, my 'sauce' was very wet and runny. This would come back to haunt me.....

Mistake three: I roasted fresh beets. Mrs Nix likes loves fresh beets. So I went with fresh beets that I roasted before making the burgers. They did tasted good on their own, but they didn't bring the sour/acid 'zing' of pickled beets. Bad choice on my part.

So this was a case of 'three strikes, you're out.'

The flavor profile wasn't balance, and it was a big mess in the end.

Oh, yeah, I ate it. No question about that. I mean it tasted pretty good. It just lacked the excitement of a proper Aussie Burger.  But, that's is OK. I now have a starting point to build on. I see the potential here. Hopefully, before the GAW is done, I'll get another shot at an Aussie Burger and do a better job with it.   :tu:

(I should add that Mrs Nix really liked it. She had the foresight to ditch the bun and go with a knife and fork. She liked the flavors, and didn't mind the heat from the chili-catsup mayo. As a result, she gave the burger two thumbs up, whereas I just ended up with two thumbs covered in hot beet juice.)

A question for the Australians out there:

From what I found, the egg, beets, pineapple, and chili-catsup mayo are all mandatory items. Other toppings like bacon, cheese, tomato, lettuce, and onions are more a mater of person taste. Are there elements on the Aussie Burger that you would consider a 'must' for your Australia Burger?

Like you Nix, I too had a rather lacklustre burger - not bad, but nothing to get excited about either.

I was in a bit of a hurry tonight, but I fancied something a bit different, so I winged it a bit and made myself a couple of quarter pound chilli burgers - beef mince, onion, smooshed garlic with salt, parsley, chillies and cumin for the burger accompanied with just some manchego cheese and shredded lettuce drizzled with Nix's most excellent chilli sauce.

Like I said it was okay, but not gorgeous.

Some good looking burgers everyone.  Like the glazed mushrooms Blackbeard, and the Souvlaki burger looks delicious Nix.  Also Syem's lacto-fermented ketchup sounds good.  Maybe we need a recipe thread...

Taking it easy today, and it warmed up to above freezing (2 degrees C!) so I got the mini charcoal grill out and burgered for lunch. 
Same recipe as before - local ground beef, onions, garlic, egg, breadcrumbs.

Brown both sides.

I love kangaroo, however it's a bit low on the fat side, so I find it's not ideal for a few things. Burgers would probably be one of them.

Hahaha. I was thinking of black-eyed peas, sweet potato, chickpea flour, onions, mushrooms, and parmesan cheese. Probably an egg to help bind it together.  I really want mushrooms and parmesan in the patty mix to help impart that meaty umami flavor. I think mushrooms would also give the patty some lightness and moisture.  Obviously some salt, pepper, and a few herbs to bring some extra flavor dimensions to the party patty.

I had black beans in a veggie burger once, that worked nicely, but I think black-eye peas might do slightly better. I'm probably just making that up, but I have seen depression-era recipes for 'Mock Sausage' that featured black-eyed peas.

This evening, I made a second attempt at an Australian Burger.

This one worked out much, much better......

First, I started off with a high fat ground beef (80/20) and fresh pineapple that I cut into rings. The beef patties got dusted with salt, pepper, and garlic powder. Then the patties and pineapple went onto a hot grill (450ºF).

Knowing that this would be a juicy mess, I went with fresh ciabatta buns from the local bakery. This proved to be a good decision....

Here was the final ingredient list from bottom to top:

Ciabatta bun (bottom half), grilled pineapple ring, grilled beef patty, cheddar cheese, bacon, pickled beets, fried egg, sriracha sauce, arugula, chili-catsup-mayo, and, finally, the top half of the ciabatta bun.

If this doesn't look huge, you've no idea......

Oh, my! 

Aside from feeling like I needed a jaw transplant from a Great White shark, this thing was amazing.  In hindsight, my first attempt was rather pitiful. Here the grilled pineapple brought some big flavor, along with those pickled beets. The bacon added a nice smoky-salty flavor as well. I think that bacon should be mandatory for the Aussie Burger.

My fried egg ends up being a bit firm, but MRs Nix reported that hers was perfectly runny and delicious. We both though this was absolutely delicious and absolutely too big. Mrs Nix didn't finish hers, but I gave mine a complete effort.

Off to pass out now........

My understanding is this:

Beef burger
Grilled pineapple
Pickled beets
Fried egg (runny yolk)
and chili-catsup mayo sauce. 

"The Lot" apparently includes all manner of goodies: bacon, cheese, tomato, lettuce, pickles, onions, kitchen sink, and stray dogs.

But that's just what I've gotten from searching around on the 'net. A genuine Australian might say: "burger with cheese and pickles." I'd like to do some field research in the country itself, but that trip may be a few years off........  :dunno:

Right, this is not really an attempt at an entry (snigger) more an honourable mention.
I was going to do some kind of fancy-pantsy burger tonight, but in the end I really fancied a good horseradish hit, so I made my Brit Burgers again. Not quite as good as last time... but still good.  :tu:

Venison tends to be a bit lean. Did it need more fat? More salt?  Mum's special touch?

A lot of the recipes I have found pad them out with breadcrumbs which I would rather not do.
I'm thinking of chickpeas, kumera (sweet potato), coriander....
Just tried this tonight... far too much kumera. Was OK though.

I saw this challenge not long after it started - And by a strange coincidence I was making burgers that night
So I took my piccies - But forgot to post - Anyway just squeezing it in at the 11th hour.

But I wanted to tell you my burger making hi-story.

When I was a kid in the UK we frequently had barbecues but never made burgers
We often had burgers - but they always were bought in a pack from the supermarket 
As an aside at that time I had never heard of MacDonalds either :o - As they had not really hit the UK - yes I am old!!
As someone mentioned earlier we had Wimpeys

Anyway page forward a few years and I was bumming around the USA and ended up in Galveston Texas and got a job in a restaurant
Guess what my job was? ...... Yep ...... Making burgers - We made them from mince, or should I say ground beef - and no other ingredients
We were taught to make the meat into a ball then slap it around from hand to hand for a minute or so to make all the meat bind together - It works really well
They were served on a bun with ketchup on one side and mayo on the other - and with a piece of iceberg lettuce a slice of tomato.
Very traditional - And they were good!!!
You may recognise the construction below !!

Since then I always make my own - But usually throw a few other ingredients into the meat - Salt pepper, paprika and onion on this day - As you can see!!
But I have the good ole USA to thank for teaching me how to make burgers

You may recognise something in the second photo - This was not a set up at all for MTo - I had to use the pin in the Cybertool to unblock a few of gas jet holes in the bbq

Very similar recipe - I hope I don't get disqualified - But threw in some grated carrot and chutney into the mix - Bun the the same

Strangely the burgers to me at least seemed drier - I was expecting lovely moistness from the carrot and chutney - So not sure I'll try that again
Oh and my fussy son will not have the healthy salad in his bun.

Due to the vagaries of fate, I have not been able to cook any more burgers this week.

I did go out to a pub for lunch for a burger (Aussie style, of course - Beef, Bacon, Egg, Cheese, Tomato sauce, Mayo, Beetroot relish, tomato, lettuce )

I reckon my home ones are better. They might be a bit messier, but they're a lot more generous, and I reckon more full on for flavour.

I might be able to squeeze some in for lunch today, but I'm not sure how the timezones work and if that'll be too late.

On an unrelated note, I'm not a huge Little Creatures fan, but I do make an effort to visit their open brewery/pub whenever I am in Freo  :tu:

Well... not to blow my own trumpet or anything, but I really excelled myself this evening... I also made some excellent burgers!  :2tu:

Lamb and Kalamata Olive Burgers (with thyme, mint, mushed garlic and a splash of rioja) on ciabatta with mayo, humus, tzatziki, iceberg lettuce, piccolini tomato, feta cheese and... streaky bacon, with extra tzatziki and a sort of Greek style side salad.

I couldn't let Fuzzy steal all the glory here....

With a bit of last minute effort, I was able to sneak in my attempt at a veggie burger this evening. 

My 'recipe': Roast sweet potato, black-eye peas, chopped green onion, grated carrot, and chopped parsley. This all got mixed together with some salt and chili powder. I tried to leave a few beans intact.

After that was mixed, I added a beaten egg and some chickpea (garbanzo bean) flour. The egg to bind, and the chickpea flour to stiffen the mix up.

This all sat in the fridge for a couple of hours, where it did indeed form a stiff mixture. The mix go formed into patties and fried in a cast iron skillet. I got the skillet fairly hot because I wanted to form a good crust.

The patties got topped with a sharp cheddar, which melted nicely. Then they got plated up with onions, catsup, and butter lettuce on ciabatta rolls.

.....but...you can see the patties got squashed and I ended up with a bit of a 'blow-out'.

Undeterred, I jammed the 'burger' back in the bun and continued to munch away. These were messy, but proved to be very tasty and filling.

Mrs Nix insists that we have them again..... guess that means she liked hers, too.   :dunno:

Next time, I'll pick a softer bread.   :D

my seal looked good, but I still had some leakage during the last 2 minutes of cooking, I stood by watching helplessly as a crack appeared where I made my incisions, but it was still delicious and I added some more cheese to the top....

It's 1330, 16th of Feb here. What is that your time?

Anyway, this one is what I would call the "inadvisable burger" - most of the key ingredients are near, at, or past their "best before"....(now it's just second best)

Burger is mince with onion and egg, with some black chia mixed in (why not) and enough garlic to wipe out the entire cast of Underworld (just in case the meat was a bit...unusual tasting....)

stacked with fresh tomato, lettuce, mushrooms, bacon, cheddar cheese and fried egg on (unleavened.....) bread. Topped with mayo and tomato relish (and sprinkled with black chia seeds, because why not?)

I forgot the time thing, but there's my watch. I'll have to check the rules and the time zones to see if this even qualifies.

(Once again, CHECK OUT THAT EGG! I'm not saying I'm the best at eggs, but someone bloody well should be!)

BB, that Juicy Lucy looked great. The onion rings were a superb addition in my opinion. Freud will have to get in line, I want the next one!

Sea Monster, I was debating if your entry qualified. It's still the 15th here, but the 16th where you are.  Mrs Nix stepped in and decided that your entry shall be included. I think the little arrow pointing to the burger on the plate in the watch photo won her over.  I also think that because I didn't announce the start time until well into the 1st of January, your time, you should be given credit fo getting your entry in within the specified time period, my time. So, fair play. Oh, and excellent job with the fried egg!   :tu:

Just one more wee story from my restaurant in Galveston ...... that really made me giggle at the time   :)

The restaurant was actually on a pier that ran from the beach/sea wall out into the Gulf of Mexico - The kitchen was right at the far end
The restaurant was called  The Shrimp Boat - I still have the T-shirt - Happy Days !!   :D
And on our menu, as well as my most excellent burgers, were various seafood dishes including of course ....... shrimp   :salute:

Now anybody who knows Galveston will know it is very famous for its shrimp.
There is a harbour behind the island which houses a shrimp fishing fleet, and every year there is even a Shrimp Festival, where all the boats get dressed up.

I am sure our poor unsuspecting diners imagined the shrimp boats coming alongside the Shrimp Boat pier every moirning and unloading their fresh catch into the restaurant kitchen  :tu:

And now the funny bit .....
All the shrimp we served came out of the freezer ....... and originated from Florida!!

I did check GoogleMaps and Google recently and could not find the restaurant and possibly not even the pier
I wonder if they did not survive the big hurricane a few years ago.  ???

I've had a Smashburger burger (down in Colorado) and it was really good. Different approach, but quite tasty. I think the cast iron is really helpfully in getting a good 'crust' on a burger. I highly recommend!

I tried the 'smash burger' technique last night. I think I made my lumps of beef a little large, and then didn't 'smash' them down thin enough.

But, I must have done something right, because MRs Nix kept saying her burger was 'amazing'. 

We omitted the buns and served them on big slices of iceberg lettuce. The burgers got seasoned with Cajun seasoning and were topped with cheese, caramelized onions, and mustard.

Make some bacon cheddar burgers yesterday.  The usual onion and garlic in the patties, but this time added some of the hot sauce Nix had included in the GAW package.  It's good sauce!  Hot but still tasty.  The weather was cooperating so used the charcoal grill.  This was also the first burger of the year to include spinach from the garden (plants I had overwintered in a greenhouse are growing again).  Overall an above average burger experience!  :D

I'm not so fussy and usually just throw mine together randomly.
Mayonnaise, avocado, capsicum, beef, onion, egg, a slice of tomato and chili sauce.
Garlic salt, avocado, baby spinach leaves, bacon, beef, mushroom, onion and coconut cream.

I love mushrooms on a burger.....they add some 'umami'. It's just that I've never tried coconut cream as a topping.  But, that'll change here soon...... :D

I've had 3 burgers so far in Paris, in order of enjoyment:

5 guys
Fresh factory (think it's not a chain but sure feels like one)

Top two are tied tbh, 5 guys was not as fantastic as the hype, it was good but expensive, Fresh Factory is similar where you choose all the items (and they have those digital kiosk screens which you can change languages), slightly less expensive but probably as good as 5 guys quality wise.

Quick was just cheapish and fast, burger patty itself was pretty bad, would have rather had Burger King tbh.

One thing I noticed is that in France, or maybe just a Paris thing is that all sandwiches have dijon mustard on them. I had a caeser wrap, no caeser dressing, yup dijon. BLT, dijon, chicken and bacon, dijon, crock monsieur, dijon, all my burgers had it, in varying quantities, even most of the mayonnaise in the supermarket have a touch of mustard added. :facepalm: it literally kills all the rest of the flavours.

I do like mustard on my burgers. However, I'm not sure I'd want it to be the default condiment for all my meals, though.

And....agreed. Five Guys is good--based on my one experience--but doesn't really live up to the hype. I'd go back, though.  :tu:

So a couple of double-cheeseburgers for lunch. These worked out really well today, probably because I followed the usual recommendations:

-- formed the patties thin, with minimal handling
-- chilled the patties for 30 minutes in the fridge (although it's actually a bit colder outside)
-- got my skillet smoking hot (literally smoking)
-- seasoned both sides liberally with salt and pepper
-- seasoned one side with onion powder, the other with nutmeg (Nutmeg is a trick I picked up from a Canadian guy who made a killer burger, so I call this my 'Alberta Burger'.)
-- slapped the patties in the pan and did not move them (great sear and crust).
-- flipped the patties once.

This time the plan came together with excellent results. And I found myself asking myself, 'why aren't I making these more often.....?'    :D

Anybody else making up some burgers lately?   :cheers:

Now... not a burger, but... it is beef and it is in a bun (roll), but last week I picked this up for lunch from one of my favourite butchers in a certain market town down south. It's a hot roast beef and horseradish roll (bun) - the beef was beautifully tender flavoursome... and there was enough of it to feed a small african village... for a week*.  :2tu:

80/20 ground beef seasoned with salt, pepper, onion powder, and nutmeg. Great sear and crust from a hot, hot cast iron skillet. Served with cheddar cheese on Ciabatta rolls with onions (me), pickles (all), and some Dijon mustard.

Delicious enough to make you smile, juicy enough to keep you giggling and reaching for a napkin.   :D

There's a place , real hole in the wall , up the road a bit. Back of a small Fina convenience store.  Lady makes the best red onion burger I've ever had. The whole place has a 1978 vibe.

Another fairly simple burger this evening:

85% Lean seasoned with S&P, garlic powder, and onion powder. Patties were fired up on the grill with some Applewood chips providing the background smoke. Topped with Provolone cheese from Wisconsin ( Thank you, Wisconsin! ).

Awl served up on a ciabatta-style roll, with Nix's Special Sauce*, lettuce, and onion (for mine). A little extra black pepper to push it over the top.

* Nix's Special Sauce is a secret blend of mayo, ketchup, mustard, and Worcestershire sauce. Nobody knows the exact ratios of ingredients, but it is rumored to be heavy on mayo and ketchup.

Yeah I want to try them at my next smoking session but considerably smaller. I also need some wood chips. Not had stock for a while.

What are your favourite woods? I've used apple and hickory to date. Tried mesquite but didn't like it even with pastrami which needs as much smoke as it can get.

Apple is my go-to. Cherry, Pecan, and Hickory work well, too. I like the Post Oak they use down in Texas, but I can't find that around here.
