Stag has been,and continues to be,one of the most popular materials in the knife making industry.

That stag has wonderful patina.
There was a time when Sheffield steel and their products were the best in the world.

Stag has always been one of my favorite handle materials. I tend to favor old stag rather than the newer style but like them all.
Here are a few from my accumulation:
First pic is of two George Wostenholm Celebrated Cutlery knives from about 1870 to 1890.
Second pic is from the top:George Woodhead(1860's);center:Samuel Robinson (same era) bottom:Replaced blade on huge folder.
Third pic is:Top;Charles Congreve quill knife circa 1830's;center:Empire Winsted CT equal end jack with purse;bottom:unmakred miniature pruning knife.
Fourth pic. Vom Cleff Germany lobster pen with locking master blade.To close push down on manicure blade to release.

First pic is an Edward K.Tryon Philadelphia PA large jack.
Second pic is a George Wostenholm 2 blade jack that I have carried for many years.
Third is a Wostenholm horseman's knife in near mint condition from around 1900.
Fourth is a Wostenholm whittler with pressed stag handles.

And a few more newer ones;these are a bit different.
Fist pic is a cigar cutter/box opener by J.A.Henckels in the original box.
Second is a very large Italian stiletto.
Third is a custom made bolo tie knife and stag sheath by Jim Turecek of Derby CT. Note that the scale of the stag matches the size of the knife perfectly.
Fourth is another bolo tie with a tiny stag handled knife mounted on a piece of crown stag.

Randall Model 21 Little Game.
This knife has a 3 1/4" stainless steel blade,brass hilt and butt cap and a nice piece of India Sambar Stag for its handle.

My Randall may seem some what pedestrian after Ray's display of knives.

This is a Randal Model 15 Airman CTD,cut down tang.This has seven options,which makes it rare, since you've only been able order five options for the last ten years.

That Randall is quite nice.When I bought my first custom knife I had a choice of a Randall similar to that or a drop point hunter by William Zalesky. I chose the Zalesky knifeand have often wondered if I had chosen the right one.Well that was forty plus years ago so I can't do much about it now.My only Randall is a model 7-5 that someone named Bob McKinley owned prior to me.
Here are a few more from my accumulation:
#1 An Anton Wingen and a vintage Remington RH73.
#2 A dagger made for Cogswell & Harrison London gunmakers.
#3 A Fred James bowie circa 1960.Fred worked for Wostenholm at one time and had a lot of their old stamps.This particular one has some fancy etched sayings on the blade but isn't stamped with his name.It was pronounced an original Fred James knife by Jim Taylor(RIP)who knew him and his wife Ivy personally and wrote several articles about him.
#4 A Joseph Rodgers Norfolk St. bowie with a 9" spear point blade and original sheath. Bought in an antique store for $225 several years ago. One of the best finds I ever made.

Yes they made these about 20-30 years ago.I believe I have about four more in my collection.
The BCC edition was a special run for the Buck Collectors Club in 1991.

This is one of Randall's most iconic handle designs.
Decades ago,when Bo Randall first eyed a Scagel designed knife,he never forgot it.It was so etched in his memory that many years later,when he designed this Model 25, he incorporated the Scagel handle design.

This is a Puma Prince.It's a medium size back lock folder.It has India Sambar Stag handles.It's a 1998 production which I bought new that year.

This is a Randall Denmark Special.To provide some scale it has a 4 1/2" blade.
It also has some rather burly stag.

Thanks Dean. I used to have one of those lever locked auto knives. Imo they´re a bit safer than button operated autos as they are less prone to accidental opening while in your pocket.

Picked up this Bear beauty yesterday. Stag handles, liner locl, pocket clip, TiNi coated 2.8" 440 blade, nickel-silver bolsters, SS liners, screw-bolt pivot(for servicing and adjustments) and OHO w/thumb hole. A nice meshing of traditional and modern folders. Too bad Bear never put these into mass production. This is one of the ones they did make. I bought it for $35. I think that was a good deal. Or, at least, that's what I'm telling myself. :)

I'm still looking for my first stag scaled folder. Trying to find something cheap, but I feel best would be setting aside the huge amount of dough (as opposed to buying a ton of $20 and below knives all the time) for a stag scaled S30V Buck 110 with nickel bolsters. A Mikov Fixir is in my budget, but I think it's fake stag.
This little guy is really stag I think. 7.5 in OAL, 3.75 inch blade. Small compared to today's hideous "Zombie Killer" abominations, but it gets the job done, including cleaning most game. Same reason my favorite Moras are the Robust and Basic. I actually carry this guy around the house and farm a lot. Don't carry it in the woods, I'd rather lose an $8 Mora than this heirloom. After all, it was Granddad's; and a knife he actually cleaned deer with. I think the blade shape would be suited for that than would a drop point Mora.
Edge Mark 460. Back in the 1960s and 1970s, Edge Mark (who used to import knives from all over, which included Seki, Solingen, and even a few KJ made Moras) imported all sorts of stag scaled fixed blades from Solingen (I think Anton Wingen), all looking essentially the same. The 460 and it's deer hoof scaled brother, the 465 (used the same blade blank) I think were the smallest.

That's a nice looking knife but I'm sure it's not Sambar Stag.
It appears to have been machined jigged on bone scales.

You're right, toolguy! I did a bit of looking around after reading your post and it is called "Indian Stag Bone". Which means it is made from the jigged bone of a stag and not the antler(I think it still qualifies for the thread, because the title doesn't specify a stag's antlers only). Seems Bear uses the stuff a lot. I had wondered how they sold the stag-handled knives so inexpensively(it just isn't the antler part used, but is part of an Indian stag). Guess I should have researched that. I'm not discerning though, so it will have to be close enough for me for now.

This is a Buck 110 that was modified by removing the rear of the frame.There was a piece of black melanite, a brass spacer placed and then some very fine Sambar Stag used as the main part of the handles.
The blade was also done with a black ceramic coating that has a mirror finish.
