Not that confusing if you realize that jack knife is only a generic term for a one or two blade knife, with blades on one end.
Jack knives are then broken down into distinct styles aka patterns.
Barlows, copperheads, teardrops, gunstocks, sodbusters, all jack knives.
Traditional pocket knives were often designed with a purpose in mind. A banker or student would not need a large trapper. A banker or student would need a sharp pencil, thus the little pen knife.
A copperhead typically has one or two blades on one end with the bolster raised to cover the sharp tang corners. A jack knife.
Case and Frost make a knife they call a copperhead with a blade on each end. It's not a copperhead, both companies borrowed the copperhead name and used it as a marketing gimmick.

Well if a trapper counted I have a very nice one my wife had custom made, but I do have a small two blade somewhere, I found it, but have no clue as to where it's hiding? :think:

There were some two-blade versions made in that size range, however. Specifically, some were made under the Schatt & Morgan brand, and others as part of the Remington Bullet series. They don’t go cheaply, but if it’s something you really want and will carry and use a lot…
