Usually I just find hard chewy lumps and powder.

The chewey lumps are only in the spicy ones I've had.  I really have no idea what they are.

Not to dog the Carolinians or Texans(or Memphis people) but if you want the BEST BBQ head over to Kansas City. 

                Life is so short and so many great ways to BBQ ribs...Carolina,Texas,Memphis,KC,St.Louis,Chicago........The surest way to start a civil is to start a debate about which region does the best ribs,pizza or chili.
