Vic floral knife blade question

I came across a floral knife today that has definitely seen better days.  The blade is about as sharp as a dull butter knife, very rounded, can't really call it an edge.  I'm thinking of using my Lansky and putting a new edge on it, but not the chisel grind, a standard grind.  I'm sure it'll take a while, but I don't mind.  I'm just wondering if anyone thinks this might not be a good idea to try.
There's no such thing as "Too pretty to carry".  There's only "Too pretty NOT to carry"...... >:D

While I like the flat gring on that model and I believe it's probably the best choice for thy knife, I can't see any reason why a standard V grind would be a bad idea if that's what the application calls for. 

I have a custom one where the maker put a convex grind on the edge and it works well.
