It's not clear though if those were recordings of past instances of the one, or if they were facets of the current Neo reacting in different ways to different things, or different aspects of what was being said by the Architect.  I don't recall him specifically saying the images on the screens were previous incarnations of the One.

Specifically, no.  He did say that previous incarnations reacted in a multitude of different manners.  It's possible that the Architect used Neo's image to illustrate the reactions of his predecessors, but I think both for the sake of ease (why recreate something you already have a copy of?) and authenticity (if they can recreate the reactions on a new face, what else did they fabricate?) the Architect would have used the actual recordings.

At least that would be my take on it.  I could easily be wrong, but I'd be (more) suspicious of a manufactured recording than a real one.

There is also what we have come to know about the Architect. When Neo first met him we had no idea if anything he was saying was the truth. But as events unfolded it seems as though he was completely honest. His conversation with the Oracle at the end showed that he was quite insulted by her when she questioned whether or not he would do what he promised, further giving the impression that it is not within him to be dishonest.
