New knife; Orange Spyderco Rescue 93mm.

My first fully-serrated EDC blade.

So far it's taken some getting used to, I'm a plain edge guy and my typical cutting routine is poke forward and slice down without really moving the blade. I'm working on this "sawing" motion required by the serrations. The only thing I don't really like is the debris created by the serrations, if I cut a lot of cardboard there's always little fuzzies all over the ground.

Other than that the blade is sharp, thick and heavy. And the handle is comfortable and orange.



Those spots on the blade are corrosion beginning already. I had the knife for about a week and have used it quite a bit around water and done some food prep so this is expected. It may be staining I will update if it gets worse.






The teeny tiny tip. Looks more fragile than it is, I imagine it would break in short time if you were to pry (shame on you!) but through general use should last long enough to be worn down by sharpening.

It was a nice find because it's actually not a knife I would ever hunt down and buy (fully serrated, already a form factor I own and so forth) but it just kind of popped up for trade and I snagged it for the orangeness.

The Rescue does look nice, it was one of the options I looked into to keep in my car.

Its almost identical to my yellow handle Atlantic Salt but It dosent have that dip in the spine of the blade .

As most of you know, I work in a restaurant to support my habits. It's usually a fairly boring place to work, the same things happen every day and most of the time is passed by making jokes and talking. I usually roll into work a little early and chatter with the other employees before starting my shift, I like the people that work there and like to sample what they've been cooking during the day.

Saturday was a little different. I arrived at work and was surprised to see a former employee stroll in the door ahead of me carrying a large cooler. We talked for a minute and then he called the chef over and opened the cooler. Inside were two 25 pound bass he had caught a few hours earlier. All the cooks got very excited at this point and began the quick process of creating a dish centered about the bass to be served that night as the gentleman went out back to fillet the fish.

Being that I was early and there wasn't much for me to do I was given the job of "breaking down" the fish. Sounds pretty innocuous doesn't it? Well, in kitchen parlance that means I was in charge of cutting all the organs out, washing as much blood as I could out of the heads and cutting the parts into smaller parts to go into a stockpot to make fumet. In short, it was really gross but something I'd never done before so it was at least interesting. The only small knives we have in our kitchen are cheap paring knives, they don't cut well at all and were having a hard time with the fish so I washed my Rescue and then went about breaking down the fish. It worked remarkably well for being a sheepsfoot serrated blade. Even covered in fish "stuff" my grip remained secure and I always felt in control. The serrations worked very well on the spine and overall I was satisfied with the performance. Not something I'd want to do again though. 

Later that night I was able to eat some of the fish and it was amazingly delicious. I was surprised at the quality of fishing that is so close to me. Now all I need is a boat and the inclination to sit in the same spot for hours on end.

There are a few ways, the easiest and best being the Spyderco Sharpmaker. The ceramic hones have a triagular cross-section and can be inserted into the base to present either the flats or points of the stones. The points work well for the serrations.

Alternatively there are several sizes of diamond coated sharpening rods that can be used freehand to sharpen the serrations, it's hard to do but gives the end user more options on edge angle and so forth.

I'd hate to have to clean out the fish goop out of handle/pivot, especially on a riveted knife!

Mmmmm fish I love gutting/filleting fish. I may not be the best at it but i enjoy it never the less. Once spent a couple of hours gutting and filleting about 40 fish, great fun!
