If you ask me, there's a proper Swiss Army Knight's way to eat an apple, or any other firm hearty fruit like a pear or the occasional peach, for that matter.  The basic premise here is to make individual bite-sized "chips", or "shards" from the fruit, using the previously cut flat surface for the edge of the next bite-sized chip.  In this manner, the fruit is carved away, one bite at a time, making successively deeper cuts... always keeping the freshly exposed flat surface as the leading edge of the next slice... and taking care to maintain a fairly consistent peel-to-flesh ratio until no more peel remains.  As the cuts begin to expose the seeds, care is taken to extricate them from the fruit while successive deeper cuts are made and no consumable fruit is wasted.

Mind you, these cuts are not made against a cutting board - they're careful pull cuts made toward the thumb of the dominant hand, but before the blade makes it through the fruit, the fruit is rotated 90 to 135 degrees (sometimes as much as 150 degrees) in the same axis as the hinge of the knife such that the fruit is cut almost though-and-though without the blade making contact with the Knight's thumb.  At the last moment, the morsel of fruit is secured between the blade and the thumb of the dominant hand and snapped off.  Bringing it to the lips with SAK still in hand like a Knight at a feast is optional but encouraged,

Pretty much what I do, with some small differences:

I awlways start from the bottom, leaving the stem to the end. I cut slices around the top, until the center is thin enough for an horizontal cut. Then start again going around and so on...

When I reach the pits, I just cut through them and eat them! Pits are apples, too!

So, here's my apple eating process:

Clean the bristles at the bottom.



Make first angled cut.



Make a couple more around, to make the center pointy.



Cut horizontally and go back to the beginning.

Now, the core part of the apple (and of the process):

Get the core pointy as before.



Cut horizontally. Usually, you cut the pips in half. This was a small apple, so I got awl the pips in one cut. Eat them!



Keep going until you reach the stem.



Finish the apple and, if need be, sharpen the stem into a toothpick.

That's a clever technique.  You see, if you and I had any teeth, we'd be able to eat an apple end to end (stern to stem) without never noticing the core. We'd just avoid the seeds. It's only when you eat an apple round and round like an ear of corn that it's structure offends one's bite.
