Pallares Vs Palles Review

Palles and Pallares look very similar, as the Palles is basically a lower cost Asian made (possibly Chinese made) version of the Spanish made Pallares.
Both can be purchased online and some dealers sell both.
I originally bought the Palles and, following a discussion I had with our local huge knife Spanish member
I proceeded to buy some Pallares knives.

Here follows a comparison of the lower cost 9cm versions, in stainless steel
(I avoided Carbon Steel) and composite handles. (a Video may come later).
They look similar but the Pallares looks/feels a lot more hand made than the Palles. I understand that there is a lot of manual work involved in the making of the Pallares.
They were both sharp. The Palles came in a box, the Pallares in a small nylon bag.
They have very attractive leaf shaped blades and both feature a halfstop, though none has a perfectly flush backspring in the 90 degree position.
The actual blade of the Palles is slightly narrower.
Weight comparison
The Palles has a perfectly flat grind and a sharp angled edge.
The Pallares is also flat ground but there is some curvature to the sides of the blade and the edge blends in, with no distinct separation between the rest of the blade and the edge.
The Pallares uses protruding rivets, giving it a very handmade look.
The Pallares has a much more solid feeling spring and has better snap – they can both be opened easily and both feel solid open or closed.

From my experience the steel used by Palles is softer, but it can be easily sharpened.
- The Pallares does feel like the better knife and you get a product with some heritage.
None claims to be a premium, finely finished product, especially with the composite handles.

I wanna see a well-earned patina on that one in the near future, they are a joy to use for food prep!
I hope you enjoy both, and know that the genuine Pallares come in different sizes but
colours
too! You can collect them all, my favorite is the

I like the friction folder ones more (without backspring) - they have some real old school charm.
Do you know what steel the SS versions use?

Nice review, I like the Pallares more too.
Heres mine, it was gifted to me in spain. I use it for food prep, as its nice and sharp.
Its the carbon steel version, and I sort of got a patina(its my first carbon steel folder, so I might accidentally mistreated it sometimes.

I've got a similar shaped Spanish folder from...Muela? Cudeman?
I'll have to dig it out and have a look.
