For me, the crucial ingredients in chili are: garlic, cumin, and, of course, chiles. If you've got that, you've got chili in my book!

I like your idea of mixing stronger and weaker chile powders. I frequently use multiple chiles in a batch. In this case, my commercial chili powder is sweet, but not very hot or piquant. I think a more interesting flavor and spice-level can be achieved with multiple chiles.  :tu:

I agree... oftentimes flavor and heat are found in different types of chili.  I made the mistake of buying one large container of chili powder that is neither hot nor flavorful and begrudgingly am forcing myself to use it up slowly before buying more.

And what better time to make chili?  :dunno:

Yesterday I soaked a pound of Pinto beans. This morning I gave ‘em a quick trip through the  pressure cooker. Nice and soft, the way Mrs Nix likes.   :tu:

Also yesterday, I collected up a few chiles—Ancho, Guajillo, and New Mexico chiles—to make a chili paste. The Jalapeños in the picture were not used.





The paste is made by soaking the chiles in hot water, then blending them with roasted garlic and salt. The mix is heated through with a little pork lard…for goodness.




A potent base!  :ahhh

More ingredients:

Creole trinity (Celery, Onion, Bell pepper) and pope (garlic), a little bacon, cumin, and those Jalepeños that didn’t get used yesterday….




In addition to the beans, I used three meats: brisket, ground beef, and ground lamb.




I started out by rendering some fat out of the bacon, then adding my garlic and ground beef. I spent a long time browning the beef thoroughly—I wanted the flavor from that browning to run through the whole pot!

Once the beef was well browned, I added ground cumin and a bit of salt and pepper, then the lamb. This mix got sautéed for a few minutes, then the onions joined the party. After the onions softened up, in went the Bell pepper and celery.

It was starting smell really good.

Once the veggies had ‘sweated’ a bit, I added chili sauce, cubed brisket, and the beans. The pot is now simmering away on low…smelling great.

A few minutes before serving, I’ll add some more salt (I’m sure it could use a bit more salt) and a big pinch of Mexican Oregano.

Looking forward to dinner!    :ahhh

I used to make chili all the time.  I used to start it pretty early, and have it ready for supper time.  Slow cooker on low for most of the day =  :drool:  Though the ex took the slow cooker ( :twak: ) but I think the Instant Pot has a slow cooker option.  :think:

I've thought about getting a cast iron dutch oven to make it.  Well that was going to be my excuse to get more cast iron anyway :rofl:

I must admit, I have never eaten a tortilla along with chili.

When I was in school, I used to make chili all the time - because it was easy :aaa:
Yes you read that right.  I'm saying I did a bad job of making chili many times, because it most certainly isn't easy.  I would make something far closer to fast food, than state fair cookoff level chili.   :facepalm:
but that was a long time ago.

Tortillas and Chili are a natural combination!  Just like Chili and cornbread........  :drool:

I made a batch of tortillas this afternoon. So chili and tortillas for dinner, huevos rancheros for breakfast.....oh, yeah, baby!   :tu:

My wife can't figure me out David.  I could eat chili in the Nevada desert in mid July!  She won't touch the stuff until mid October.  I had a chili dog tonight.
