 :cheers:  I should add, that a 1/4 - 1 can of chipotles in adobo sauce makes for a some great heat and lovely smokey flavor. If you don't have chipotles in adobo, you might find some chipotle chile powder, add a teaspoon of that for a good kick and hint of smokiness. I also add some chopped fresh Serrano chiles when I sautee the onions and garlic. Adds some freshness and heat. And I love the flavor of serranos.

Mrs Nix is not a big fan of very spicy, so I have to modulate my chiles when cooking with her in mind. If I add serranos, I take the seeds and white pith out. If it were just for me......

Penzey's makes some great chili powder in different heat levels.  For me personally, I like a little cayene powder in my chili.  For fresh peppers Serrano, chili nego, pablano and cayenne are all great choices.

Inspired by the Robb Walsh Chili recipe above.....but it got the Nix kick.

Ingredients in order of appearance in the big pot:

• Tablespoon peanut oil
• 4 links of Mexican-style Chorizo (about a pound)
• 6 cloves of garlic, crushed
• 1 large white onion diced
• 2 teaspoons cumin, ground
• 1 big tablespoon Chili powder
• 1 big tablespoon Paprika
• 1 & 1/2 teaspoon Chipotle pepper, ground
• 2 red Bell peppers, diced
• 3 pounds Chuck roast, diced
• 1 & 1/2 tsp salt
• 28oz can crushed tomatoes
• splash of water

This big ol' pot of red has been simmering away for a few hours now. Smells great and the beef is falling apart. I think it is ready, but I'll let it 'rest' in a warm oven (215ºF) until dinner time.

Mrs Nix just said dinner will be served early this evening.....  :rofl:

I made up a batch of black beans, too. After Surge made a fuss about not having beans in the chili, and Mrs Nix said she would like her beans on the side, I made a side batch.

But next batch of red, the beans go in!   :rant:

I am unfreezing the leftovers from that batch I made, I’ll be making it but into something else, I’ll be making a batch of cornbread so making one of my layered chili/cornbread meals,
Maybe since we’re going shopping tomorrow I can get whatever cheese it was the Mrs wanted and turn it into a chip dip?

Well, here’s a couple pics, I took that homemade chili from the other week that got frozen and then the Mrs put cornbread overtop, didn’t have the right size container so the Mrs kinda made a wall, hey it worked and I must say it was good!

It was good! I’ve done that before but just with a can of chili, and it’s great, but that chili I used tonight I made totally from scratch and cooked 6hrs in a crockpot!
