Any chili that I make would consist of cubed beef in a very thick sauce. I'll have to see how well I can do. Bear in mind, I'm not a great cook.

Mrs Nix and I like our chili to be thick as well. If my chili seems a bit too thin, I add a tablespoon of Masa Harina (nixtamalized corn meal) to the pot and stir in. Not only does it thicken up the chili, but it add some sweet corn flavor.  :tu:

Today was a chili day. Chilly and misty outside, big pot of chili inside.  ;)





Ingredients in order of appearance in the pot, as approximated by Nix:

• 1 tablespoon olive oil
• 5 slices of bacon, diced
• 5 cloves garlic smashed and minced
• 1.25 lbs ground beef
• 2 white onions, chopped
• 2 red Bell peppers, chopped
• 2.25 lbs rump roast, diced
• 3 tablespoons chili powder.....and then some extra...and a pinch more...plus a dash
• 1/2 teaspoons ground cinnamon (Mrs Nix's idea and request)
• 1 teaspoon salt....and then a pinch more
• 1 28 Oz can of chopped tomatoes

Update: Mrs Nix called an audible and two cans of beans were added. Those cooked for an hour before the chili got served.

Good decision by Mrs Nix.  :tu:

It was good: Mrs wanted it every night until we ran out. That is somewhat rare, so a good indicator.  :D

A friend of ours made chili and I had it last night.  It was thick, like I prefer it, and was slightly sweet.  Pictured with one of Swiss Champs , which has everything but the bowl and spoon.  Luckily I didn't have to make either with it  :rofl:

I didn’t know where else to put this, but it’s not chili, it’s more like a soup, but it’s being cooked and well, the pot came ALIVE! :ahhh

The Mrs made her funky chili yesterday, so today I finished it by topping some jalapeño chips and Cheetos both with a little kick!
