I wouldn't bother modding all those Cadets, Pioneers etc. and go straight to an Alox Executive with added PTC tools.It's been my EDC now for 7 years and I never looked back.

I like that mod, but would have kept the orange peeler. It has come in handy lots of times for lots of different uses.
My only regret is not buying them sooner.
I was gifted a Handyman (Either late 80s or early 90s) as my first SAK when I lived in Spain. I still have it and it was the first to receive a total refurb this year when i learned how to do it on this forum. Looking back I wish I had started collecting then. I travelled quite a bit in my youth and a SAK would have been the perfect memento from each place I visited. The opportunity lost in Switzerland still haunts me...So, yeah, if I could start from the beginning - start early, collect more, cherish all the people places and adventures each one represented.
At one point, I had the peeler in the setup with an added caplifter mod.However, I never found a need for a serrated 'blade'. The normal blades are razor sharp and can handle anything I need to cut.
Don't forget the tip, for use as a screw driver or a small prying bar or a scrapper or a stapple remover... I use mine for lots of things. Haven't used it to peel an orange yet, though...
But to answer the question of starting from the beginning, in hindsight, a Huntsman Plus that has scissors and plus scales would have provided more opportunities to pull out the knife, something I took a lot of pride in back then.But to ramble on a bit:The other knife I carry, a mod, has a locking blade, I do like it. If it had a wood saw, it would be ideal as well. It is 85mm seen below:I do like the Expedition Lite, has a lot of tools I like, plus a few extra, yet still somewhat slim.As for 58mm size, I love the Vagabond (seen below), but a MiniChamp is also one I likeThese were ramblings of what I like to carry, the SAKs I like to collect is a whole other story.To this day the ideal knife for me hasn't been produced, it is a Yeoman with wood saw. Modders make them.
