Mo' knives from the kitchen..........
on: December 07, 2020, 06:52:49 PM
This post will deal what is commonly referred to as a,"paring" knife. A small knife with a blade usually two to three inches in length that can be either a spear point;clip point, sheepfoot,or hooked point with handles usually made of wood or synthetic(plastic) and occasionally bone, they are used for a variety of cutting tasks in a kitchen where a large blade is impractical. The blades can also be either plain or serrated.
#1 Camillus spear point;a bit larger than average.
#2 Cattaraugus clip point with black synthetic handle.
#3 Dexter partial tang pinned to round wood handle and metal ferrule.
#4 E.Warther & sons Dover Ohio;makers of custom knives.

Last for now
#1 J.G.Ogle Toledo Ohio.
#2 Lamson.
#3 Othello Anton Wingen with edge coated in tungsten carbide
#4 Probably the weirdest one of the bunch.I believe the edge was supposed to be ground on the curved part of the blade as the maker's etch(Vita-Craft)is partially obliterated by the grind.

Wonderful collection.  My fav is page 1 #4.  Then page next next next #2.  I mean all are pretty great representations of paring knives.  I use a Cold Steel mostly but I have a Victorinox and JA Henckel.

Thank you (and all) for the kind words. The Warther was an antique store find for $2. I found out later that new it sells for $40! I am still wanting to visit the Warther Museum in Dover Ohio. The current owners' grandfather started it sometime after 1900 and was a master carver. He had a fascination for railroads and carved an entire railroad train to scale from ivory! It is on display in the museum. His specialty was carving working pliers from a single piece of wood without removing any! If anyone is interested,Google the name Ernest Warther or Warther Museum;it is a fascinating read!
The second knife you mentioned is sadly unmarked but the only bone handled kitchen knife I have ever seen.
