Texas Chili (American Test Kitchen variant)

Hi, all!  First time ever making chili and I chose to follow the American Test Kitchen's recipe on youtube.  But instead of beans, I chose to substitute it with veggie such as carrots, corns and celery, so I am calling this "Texas Chili".


Some pictures first:


The soul of this recipe is to use quality Ancho chilies, which gives a strong and sweet flavor to the dish.



To give it more 'flare', I fried some bacon with the veggie to give them more favor, and ground chuck(85% lean beef) is the main ingredient in the chili.



Once everything is in the pot, it's important to give it plenty of time to simmer.  I simmer the chili for nearly 3 hours in the oven at 275F.



Garnish with red onion, tiny bit of lime juice, sour cream, cheese and chips, it's ready to serve!

Here is my receipe:


Texas Chili(American Test Kitchen variant)

Serves ~4 ppl, total cook time 3-4 hours


Ingredients and Pre-cook setup:


Beef
1 pound(500g) 85 percent lean ground beef(with fat)
3/8 teaspoon baking soda
Salt and pepper
1 table spoon of water
(mixed and let sit 20 min)


Spice Mix(blend after the chilies are cooled):
3 dried/bendable ancho chiles, stemmed, seeded, and torn into 1-inch pieces
Warm up the shredded ancho chiles on pan with med-heat for few minutes, but don't let it smoke
Cool the chilies and blend it with the following in a blender till it's powder
1/2 ounce tortilla chips, crushed
1 tablespoons ground cumin
1/2 tablespoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon ground coriander
1 teaspoons dried oregano
1/4 teaspoon dried thyme


Veggie(all chopped into small cubes)
1/2 can of carrots
1/2 can of corns
1/4 can of celery


1/2 tablespoon vegetable oil
1 (14.5-ounce/411g) can whole peeled tomatoes, blended in blender (instead of 0.5 can, I put 1 can in)
1 cup water
Few strips of fat bacon
1 table spoon minced canned chipotle chile in adobo sauce(depending how spicy it is)
1/2 onion, chopped
2 garlic cloves, minced


Cooking Steps:
Pre-heat the oven to 275F/150c
Water cook the bacon until all water evaporated, and only bacon fried in its own fat, stop when semi-crispy
Stir fry all the veggie with bacon fat till a little charred, remove from pan
Stir fry the onion and garlic till slightly brown, toast in the beef, remove after beef is browned
Put a table spoon of oil into the dutch oven/ceremic pot, and stir fry the beef together with the spice mix
Toast in the veggie, blended tomato, water, chipotle chile and bring it to boil on fire
Keep stirring to prevent sticking at bottom
Once boiled, bring the whole dutch oven/ceremic pot into the pre-heated oven and simmer for 2-3 hours


After simmering in oven, toast in the following for seasoning:
1 teaspoons sugar
1 tablespoons cider vinegar
Season with salt if needed




Garnish idea:
Cheese
Tortia/Potato chips
Sour cream
Avocado
Tiny bit of lime juice
Tiny bit of chopped cilantro and red onion
