Dinner on the Weber

Haven't cooked much lately, so tonight I fired up the Weber. My wife wanted an open faced turkey and gravy sammich,,, and I was thinking a porkchop sammich. SPOG on the turkey breast (Salt, Pepper, Onion powder, Garlic powder ),,, Mojo rub on the chops,,, oak and cherry wood chunks with lump charcoal.  A couple of hours in the smoke, and an hour in foil. Dinner was pretty darned tasty!!

We just picked up a Weber this year- I won a gift certificate to a hardware store and we decided to put the money towards a nice grille since Megan enjoys barbecuing so much. 

It is so much better than the cheapie, disposable type barbecues we usually get.

I really do enjoy cooking on mine!! There's very little that can't be done on a Weber kettle. From grilling, to smoking,, and even baking.

I made dinner on the Weber this evening, too.

For grill lighting, please the Swiss Champ in action in the Go Big challenge thread.

Just cooking for two, today, so it is not very impressive.





You can see I used my best indirect cooking technique for the first 90% of the cook. But I used a few minutes of direct heat to crisp 'em up a wee bit.





All served up with salad grown in me veggie patch. (A honey-mustard vinaigrette was added after the shot was taken....  :facepalm: )

Oh yeah,,, I forgot pizza oven.

Granted, I didn't have a Weber brand kettle when I fabbed this out of a 55 gallon drum,,, but the ring does fit my Weber as well.

I've mentioned that I am a tinkerer,,,, that Kingsford kettle above has since been the donor for a slightly bigger two level smoker. Notice the lid and the vents on the bottom of the drum,,,, from the Kingsford. I call this smoker Big Ugly,,,, and it really does a nice job. It has since been painted.

This evening I cut up a bird and grilled it on the small Weber again. My father taught me to cook chicken with low and indirect heat. He did this by cranking up the heat and burning every chicken he tried to cook. So, my chicken skills, such as they are, come from the School of Blackened Chicken.

Here I've got the coals on one side, the chicken packed onto the other, I like to start skin-side down:







When the chicken is 90% cooked, I spread the coals out and then spread the chicken out to get a bit crispy and browned. Brown good, black not so much.   :whistle:

It's hard to beat chicken grilled over charcoal!! Oh the childhood memories of burned BBQ chicken. I also have a Jumbo Joe like yours. It is often the perfect size for us too. Often I have built a wood fire in it and sat around it with the family.

Wish I could take credit for it, cause the whole family said it was good. I used a recipe from the Famous Dave's BBQ Party Cookbook

2 cups mayo
3/4 cup white vinegar
3/4 cup apple juice concentrate ( from the frozen section )
1 Tbsp lemon juice
1 Tbsp ranch dressing dry mix
1 Tbsp sugar
1.5 tsp salt
1 Tbsp black pepper
2 Tbsp ground mustard
2 cloves minced garlic
1 tsp horseradish
1 tsp hot sauce
1 tsp liquid smoke

Let sit in fridge overnight. Dunk cooked chicken in it when done cooking, and again just before plating.


Again,, all credit goes to Dave Anderson of the Famous Dave's franchise. As a side note, if anyone is looking for a good first BBQ cookbook, his "Barbeque Party Cookbook" is a great one that is filled with meats, sides and more. This book is the perfect intro for beginners that are looking to impress family and friend. The only thing that is not included is how to cook brisket.
