I caught some drumettes on sale at the store. The wife and daughter wanted sticky Asian wings,,,, I was in the mood for straight up BBQ sauce.
Cooked on the Weber with a ring keeping the charcoal in the center and a chunk of cherry and oak over the coals. (Poor mans Vortex ) If you've never used tried it, this method eliminates flare ups while allowing you to maintain 400 plus degree cooking. The recipe is something I have been using for the past 10 or 12 years. Generally I simmer it until it reduces some and thickens up. I found that low sodium soy sauce makes a better flavor, some hoisens are better than others, and I now use a syrup blend called Golden Eagle syrup which includes honey.
